My sweet, cinnamon-spiced Oatmeal Raisin Cookie Brittle deserves a little more attention. I am in love with this chewy, raisin-flecked stuff. I’m also in love with these two snacks. I couldn’t pick a favorite even if I had to. So I suggest both! One batch of brittle makes enough to try both and still have some extra for munching.
Constructing a sandwich or crumbling in a parfait are just two of many possible creations you could make. Two incredible ones I might add. Both recipes also feature my easy raw apple butter. It’s sweet, but fresh-tasting too since the apples aren’t cooked. Feel free to eat it by the spoonful, I did 🙂

Oatmeal Raisin Apple Sandwich
Makes 4
8 pieces of Oatmeal Raisin Cookie Brittle
1/2 of an apple
CaramelApple Butter
1/2 of an apple
1/2 cup raisins
2 pitted medjool dates
1/4 tsp cinnamon
- Slice one half of the apple into thin slices.
- Cut the other half into large chunks.
- Add the apple chunks to a blender along with the other ingredients for the apple butter.
- Blend on medium high until combined. Use the tamper or add a little water if necessary for blending. It’s okay if it’s a bit chunky.
- Spread a generous portion of apple butter onto four of the pieces of brittle. Top with 2-3 apple slices. Complete the sandwiches with another piece of brittle.
Oatmeal Raisin Parfait
Makes 1
2 frozen bananas
4 pieces of Oatmeal Raisin Cookie Brittle
Caramel Apple Butter
1/2 of an apple
1/2 cup raisins
2 pitted medjool dates
1/4 tsp cinnamon
- Crumble the cookie brittle into small pieces.
- Cut the 1/2 apple into large chunks. Eat the other half.
- Add the apple chunks to a blender along with the other ingredients for the apple butter.
- Blend on medium high until combined. Use the tamper or add a little water if necessary for blending. It’s okay if it’s a bit chunky.
- Blend the frozen bananas to make banana ice cream.
- Layer everything into a parfait glass.
Thank you for the reply about dehydrating it. I’ll try sometime when I have more time over the summer to experiment. The caramel sauce is great with the “sandwich” and isn’t too sweet. I love using the apple to make the sauce. I keep the sauce on each piece stored in the freezer to keep longer and easily pop out to eat. I’ll try the parfait soon. Thank you so much for the recipe. 🙂
