I did it.
I broke out the cinnamon.
I made a fall-esque recipe.
I didn’t want to, but it had to be done. It is September now, which is technically a fall month. I don’t mind fall, in fact I even like fall. The looming frigidity of winter is what I don’t like. I would be happy in a world of eternal summer.
Cinnamon and cloves and pumpkin and maple and apples, those are some of the best things about fall. Actually, fall flavors and treats are some of my favorite. Pumpkin pie might just be my favorite dessert…no, I can’t say that in a world where banana ice cream exists, but pumpkin pie is still very high on my list.
Chewy or crunchy or both? Raisins and cinnamon are perfect together, there is no debate about that. However, chewy or crunchy tends to bring up some differing opinions. I’m a chewy person, always have been. But if you’re a crunchy person I won’t hold it against you 😉 These cookies can be chewy or crunchy depending on how long you let them dehydrate/bake. So everyone’s happy!
Oatmeal Raisin Cookie Brittle
Fills 1 dehydrator tray (or pan)
2 cups rolled oats
1/2 cup water
1/3 cup coconut sugar
1 tsp cinnamon
1/3 cup raisins
- Stir together the oats, coconut sugar, and cinnamon in a large bowl.
- Add the water. Mix for at least 1 minute so the sugar dissolves and the oats get all goopy (very sophisticated terminology).
- Stir in the raisins.
- Spread out on a lined dehydrator tray or lined pan as thinly as possible (about 1/4 inch). Wetting your hands makes it easier to press.
- Dehydrate for 2 hours, then flip and peel off the liner. Dehydrate for another 8-10 hours. Less time = chewier cookie. More time = crunchier cookie.
- Or bake in the oven at 300 F for 30-40 minutes. Let it cool completely before breaking apart.
Now don’t gobble these cookies up too quickly, because later this week I’m going to show you two of my favorite snacks to make with them. I wanted to wade into the fall-ness slowly, not all in one post. There is even some apple involved in those recipes, more autumnal flavor (yikes!). Since we’re down this rabbit hole, might as well make the most of it!
