Since it’s the middle of Brownie Week, let’s take a break from all the chocolate.
I didn’t know that blondies even existed until my sister got an Easy Bake Oven. Growing up in a house dominated by chocoholics, I only ever knew brownies. But with the Easy Bake Oven you have to buy the mixes in sets, which means no brownie mix without blondie mix too. Once we had used up all the brownie mixes, I ventured to try the blondies. Not being a chocoholic myself, I loved them. From then on I compared all blondies to Easy Bake blondies, and no other desserts ever taste the same as Easy Bake desserts. I’m not sure I want to know why that is.
These blondies don’t taste like Easy Bake blondies at all. They taste like cinnamon…lots and lots of cinnamon. And coconut sugar, which tastes a lot like brown sugar, which goes perfectly with cinnamon. These are really easy to make, and they don’t require any oven, light-bulb powered or otherwise.
Snickerdoodle Blondies
Makes 8
3 3/4 cups raw rolled oats
1 tsp cinnamon
1 tsp vanilla bean powder
1/8 tsp salt
1/2 cup coconut nectar
2 tbsps coconut sugar
1/2 tsp cinnamon
- Combine the oats, cinnamon, coconut nectar, vanilla, and salt in the food processor. Process until it forms a ball.
- Press into a lined loaf pan.
- Mix together the coconut sugar and 1/2 tsp cinnamon. Sprinkle on top of the blondies and press in gently.
- Refrigerate for at least an hour before cutting and eating. Keep in the fridge.
I think this is the recipe I’m going to make of yours!! It’s the only one I could find that didn’t have dates or bananas, lol!! And honestly, it must be fate, because I LOVE snickerdoodles and I love that these are no bake, think that will make them more moist/fudgy….can’t wait. YUM!
Oh no but this recipe is from so long ago I can’t even remember what it tastes like hahahahaha 😀 Of course you can make whatever you like, but I just haven’t made this one in so long and my style has changed a lot since then that now I’m a little worried! lol
You are so funny! I will probably sub a 1/2 cup of the oats for pecans so they aren’t too dry since it’s a lot of oat flour (based on my past experience), but based on the other ingredients, I think it should be yummy. I love cinnamon, vanilla and coconut sugar. They look easy too and I need quick and easy!
That’s what I was thinking, I would never use that many oats in one recipe nowadays!
Just found these! I will search your site. Thanks! (redirected from cosmic brownies, hehe!)
Oooh yay! I am happy you found these too, but these are probably my fave blondies on the blog if you are interested: https://www.feastingonfruit.com/chocolate-chunk-zucchini-blondies/
Thanks! I bookmarked your site to explore. I already follow on youtube. But this will be easier for me to remember!
