I love dehydrating because I get to enjoy the scent of whatever I’m making for hours before it’s even ready. It’s like an aromatic bonus. I keep my dehydrator in the laundry room, so folding clothes becomes much more pleasant.
While these spiced mango roll-ups were dehydrating, I got to enjoy the spicy fragrance of cinnamon…twice. The first batch had no sweetener, so the roll-ups were way too tart for me. For the second batch I used really ripe Altaulfo mangos and added some agave. These had that perfect balance of sweet and spicy…and sticky. The agave does make them stickier, so don’t expect them to be dry to the touch even when they are done.
Spiced Mango Roll-Ups
2 cups chopped mango (2-3 mangos depending on size)
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp cardamom
2 tbsp agave nectar
- Combine everything in the blender and blend until smooth.
- Spread thinly on a dehydrator tray lined with a paraflex sheet.
- Dehydrate at 115 degrees for 12-14 hours.
- Peel off the sheet and transfer to wax paper. Cut into strips with the wax paper and roll them up.
