What I Eat in a Day {high carb vegan} - Feasting on Fruit

You know you eat too many a lot of bananas when you start just finding them randomly around your house. It was half a banana to be exact, just chilling on the floor. I don’t know how it got there. Somewhere between the case of bananas by the window and my peeling-freezing-bagging station in the kitchen  I must have dropped it. So many bananas I didn’t even notice. So many bananas that it wasn’t even missed. The main thing I’m wondering is what happened to the other half??

This case of bananas that I am currently eating my way through were on their way to the grocery store garbage because they were “too spotty” to sell. Too spotty? They were the baby dalmatian of bananas–just a few spots kinda sorta maybe starting to peek through. I really don’t understand what is so ugly about spotty bananas that they will just ruin the produce section aesthetic. Craziness.

But I’m happy to save the from their trash can fate! If only the ripe banana-haters could see those beautiful bananas now in all their creamy nicecream glory.

Banana rant over, onto the point of this post: a very nicecream-heavy what I eat in a day…

    Do you know that I might run to the grocery store today…just to get some ripe bananas…..obviously there are ZERO in my possession…but I need them for….something 😛
    (I’ve found an old “room-dried” grape tomato in my room that must have “fell” and I almost lost a Brussels sprout yesterday by my desk…but I found it!! Thank god…that would have smelled!)

      Something!?! That sounds like something I’m gonna like!! You were just using your room as a dehydrator for the tomato that’s all 😉 And yeah aged brussels sprout would’ve been nasty! Glad I’m not the only one with the produce mis placing problem hahaha!

      I certainly am lucky down here. It’s still been in the 30-40s here, but nothing compared to how crazy cold you must be! I was still freezing after eating that nicecream, but that’s what I have a space heater for 🙂

    Spotty bananas are the BEST!! I purposely buy more bananas than I know we will eat in a week just so when they turn brown I can slice them up and freeze them for smoothies and nice cream! That is pretty funny that you found HALF of one on the floor. I think you have banana their running around your house. 🙂

    I love your video, Natalie! 🙂 This all looks so delicious! You’re so lucky to live in Florida and be able to have nice cream without being cold for the rest of the day. 😉 I was there in December and I wish I could just hop on a plane and go back. We only have about 25 degrees here. And unfortunately that’s in Fahrenheit not Celsius. 😀

      Yikes 25F sounds freezing to me! I suppose I shouldn’t be complaining over here when it’s in the 40s haha 😀 I still get chilly after nicecream though, but fuzzy socks and space heaters make it work. You were in Florida?? What part? How did I not know that 😮

    I still have to laugh at all the people who are afraid of spotty bananas! Madness. My uncle only eats green bananas even after I’ve told him a gazillion times that the riper the banana, the easier it is for your body to digest..Have you ever had a green banana? YUCK. Anyways 😉 Everything looked SO yummy! Watching the chocolate-y goodness stacked high made me want to run and make another bowl this morning! Willow obviously approved of your lunch, especially when you showed the bag of chocolate chips. We’re making that soup on Saturday and I absolutely can’t wait!!! Looks so creamy and cheesy!

      Confession: I actually used to like my bananas green too! 😮 I can’t believe it now looking back, they taste terrible to me now. My dad is the same way, I keep telling him to let them ripen but he never listens. Oh well, their problem when their digestion is all messed up. I guess not everyone is as highly in tune with their digestive system as we are hahaha 😀 Obviously this was from last week, so watching that nice cream while editing and trying to avoid chocolate for a while was rough. So puppies and chocolate chips, those are Willow’s two favorite things to see in a video huh? lol I hope you love the soup. Actually I know you’ll love the soup it’s delicious!     I’m always finding banana peels around the house from my husband, it’s SO annoying, he can never just throw them away! That chocolate ice cream looked amazing and creamy and piled high and of course my favorite part was when you added all the chocolate chips, lol! The broccoli soup looks delicious. I’ve been making a version of my fat-free cheese sauce with broccoli and brother to water it down. I’ll have to check out that version! Everything looks delish!

      Hahaha that would be annoying. There is something about banana peels that actually weirds me out, which is surprising with how many bananas I peel. I loved the tower of chocolate too, mmmm chocolate in abundance <3 The soup is really similar to your cheese sauce, just with carrots instead of zucchini and not as many flavorings. I bet your cheese sauce over broccoli would be incredible! Maybe I'll try that next!

    Wow that looked super delicious!! I still can’t get myself to eat something sweet for lunch or dinner, it somehow feels wrong to me 😛 I should just go for it and made banana ice cream one day for lunch! That soup also looks so yummy and comforting 😀

    (N)Ice Cream for lunch sounds too good to be true.. but there’s no reason why not when it’s really THAT good for the body 🙂 Love your what-i-eat-in-a-days – they are always so inspiring and your videos are so pleasing for the eyes.         I would have been the happiest kid munching nana ice cream 😀 Now… I’m the happiest adult eating it ..thiiihii. I have no idea why I waited so long to try granola.. it’s so good – my boyfriend and I haven’t even got a chance to eat it with milk (that’s what people do with granola, right? :D) because we were munching the granola by itself. I absolutely love it and I can’t wait to make more and try other flavors as well.

          I never put it in milk, idk why i just love it so much dry or as a topping though. But yeah people definitely do. That’s what cereals in a box are for in my opinion…but I’m probably just the odd one out haha. You should try it you might really like it! And maybe we’ll see a granola recipe from you soon?? 🙂

    Oh my gosh, that half banana… 😀

    And those spotty clearance bananas — I HUNT for them, and sometimes bring home like 30-40 bunches at a time for freezing…. I can never believe people sell them because of those couple of spots.

    That soup from Melissa is so good — love it.

    And I’ve been working on a flat bread recipe too! haha. I don’t think mine will be ready any time soon. I ended up with more savory pancakes than anything else. I know it will work well with oats, but since I get a bit of wrath every time I share oaty things I’ve been struggling to come up with a simple recipe without. Can’t wait to see (and try 😉 ) yours!

      Spot phobia, what’s up with that? I don’t blame you for searching for them, it’s a win win situation for us crazy fruit munchers and the store. Great minds think alike 😀 Flatbread is a tough one, but something I’ve really wanted for a while. Savory pancakes sound good too, at least you have yummy trials to enjoy. My recipe actually isn’t oat based either. I have the opposite problem, people don’t like it when I don’t use oats but oh well. People just don’t like change of flours I think. Mine is still in the works, the dough is great but not as soft as i want after cooking. They might become crackers instead. We’ll see. Can’t wait for yours too, it will fun to see how we take one concept in two totally different directions 🙂

        Oh, no oats?! Even more interested now 🙂 And yes, it’ll be fun to see the final products! Not you’re making me put mine ahead of the queue so we can do some cross taste-testing 😉

        But yeah, people totally don’t like a change of flour, and moreover I’m discovering that my most vocal readers are all Aussies and oats are not considered gf over there… so it’s an issue. I have some good oaty breads I wish I could share but at this point I feel I want to wait until I come up with oatless alternatives first… so my breads will have to wait.

    OK, I had to laugh about the half a banana chilling on the floor because yeah that’s happened here! Although it was because one of the kid’s set it down while playing and then forgot about it, haha. That chocolate nice cream! Yum, I could look at that all day although I’d much rather eat it ?       You should! It took me forever to actually feel comfortable asking, but it’s worth it if you eat lots of fruit. They are just going to be thrown out otherwise…do it for the bananas haha 😀 And I do all my graphic design in Adobe Illustrator, I love doing it! It’s my other favorite creative outlet next to baking <3

Blueberry Walnut Coffee Cake! THE coffee cake for Blueberry Walnut Coffee Cake! THE coffee cake for cozy mornings while we count down days until spring☀️ Vegan and grain-free with an ultra moist fluffy crumb! Recipe below…

Cake
-3/4 cup (180g) non-dairy yogurt
-1/2 cup (125g) almond butter or tahini
-1/2 cup (160g) maple syrup
-1 tsp vanilla extract
-1/3 cup (40g) coconut flour
-1/3 cup (40g) tapioca flour
-2 tsp baking powder
-1/4 tsp salt
-1 cup blueberries (fresh or frozen)
Streusel
-1/4 cup (50g) coconut oil
-1/4 cup (35g) coconut sugar
-2 tbsp (15g) coconut flour
-1 tsp cinnamon
-1/4 cup (30g) chopped walnuts

Preheat the oven to 350F. Whisk together yogurt, nut butter, maple syrup, and vanilla. Add dry ingredients and mix to combine. Gently fold in the berries. Spread into a greased or lined baking dish (mine was 9x6”). In a small bowl combine all the crumble ingredients. Mix with a fork until clumpy. Sprinkle evenly over the top of the cake batter and press in gently. Bake for 38-40 minutes (the center should feel firm to the touch when it’s done). Remove from the oven, cool for at least 30 minutes before slicing.

Vegan White Chocolate Valentine’s Truffles
-1 package @emmysorganics Dark Cacao Coconut Cookies
-1/4 cup (65g) almond or peanut butter
-1/3 cup (60g) dark chocolate chips, melted
-Pinch of salt
-1/2 tsp vanilla extract
-8oz vegan white chocolate.
-Optional: natural pink sprinkles + 1/4 cup more melted dark chocolate for topping

Melt the white chocolate. Pour a small spoonful into the bottom of each cavity of the mold, and tilt to coat the bottom and up the sides of each heart. Freeze. Set aside the remaining white chocolate. Melt the dark chocolate chips. In a food processor combine the Dark Cacao Coconut Cookies, almond/peanut butter, melted chocolate, salt, and vanilla. Process until smooth, it should be the consistency of a thick brownie batter. Place about 2 tsps of the chocolate mixture into each heart and press to flatten. Cover with remaining melted white chocolate. Chill until chocolate is set. Carefully remove from the molds. Optionally drizzle with more dark chocolate and top with sprinkles. Enjoy!

Its #nationalmedjooldateday 🥳🥳 I have wayyyy Its #nationalmedjooldateday 🥳🥳 I have wayyyyyy too many medjool recipes on the blog to mention, so I picked this friday-easy, highly-fudgy, personal fave: No-Bake Vegan Chocolate Cream Pie!

Four ingredient chocolate crumb crust. Three ingredient date-sweetened cream filling. Its truly TOO simple and TOO good❤️

Crust
-2 cups almonds (or nuts of choice)
-1/2 cup cocoa powder
-1/2 tsp salt
-1/4 cup coconut oil
Filling
-12oz unsweetened chocolate, melted
-3 cups non-dairy milk 
-1 cup (10-12) pitted medjool dates (@ndmedjooldates are my favorite!)

Blend almonds, cocoa powder, and salt. Add the coconut oil. Blend until the texture is moist and crumbly. Press into the bottom of a pie pan and up the sides.

Blend the milk and dates on high until very smooth. Add melted chocolate and blend until combined. Pour into the crust and smooth the top. Refrigerate (creamier more like a pudding/mud pie) or freeze (firmer texture) overnight, or for at least 8 hours. Slice and enjoy!

Channeling sweet summer energy into this chilly wi Channeling sweet summer energy into this chilly winter week with a Dark Chocolate Raspberry Cheesecake Bar closeup🍫❤️ Swap in any berry you love (big big fan of the tart raspberry tang though😋), but you need a bite of this lush dairy-free filling on top of @emmysorganics dark cacao cookie crust situation. Recipe below…

Crust
-1 package Emmy’s Organics Dark Cacao Cookies
-1/4 cup (30g) almond flour
-2 tbsp (50g) coconut oil
Filling
-2 cups (360g) raw cashews, soaked 3+ hours then drained
-1 cup (240g) full fat coconut milk
-1/3 cup (105g) maple syrup
-2 tbsp lemon juice
-1 tbsp lemon zest
-1 tsp vanilla extract
Swirl
-1 1/2 cup (180g) fresh raspberries
-2 tbsp coconut sugar
-1-2 tbsp water

Combine crust ingredients in a food processor. Process until cookies are broken down and mixture begins to clump together. Press firmly into the bottom of a loaf pan lined with parchment paper. Blend the filling ingredients until very smooth and creamy. Pour on top of the crust. Combine berries, coconut sugar, and water in a small saucepan. Simmer over medium-high heat for 5-7 minutes stirring frequently until it begins to thicken and become syrupy. Smash with a fork until the berries are mostly broken down.  Spoon on top of the cheesecake mixture and use the back of a spoon to swirl. Freeze overnight. Slice into bars and enjoy. Keep leftovers in the freezer.

This is my fave vegan and paleo recipe—super moist and tender with almond flour, heavy on the molasses, with a pop of lemon, and they’re oil-free!

Ingredients
-1/2 cup coconut sugar
-1/4 cup almond butter (or any nut/seed butter)
-1/4 cup molasses
-1 tbsp lemon juice
-2 tsps ginger
-1 tsp cinnamon
-1/4 tsp cloves
-1/2 tsp baking soda
-1 tsp vanilla extract
-2 cups almond flour (oat flour option linked in my bio!)

Whisk coconut sugar, almond butter, molasses, and lemon juice until combined. Add the rest of the ingredients and mix/knead to form a ball of dough. Roll out the dough to 1/4 inch thickness between two pieces of wax paper. Chill dough flat for 30 minutes. Cutout cookies with a cookie cutter, then use a spatula to carefully transfer to a baking sheet lined with parchment paper. Bake for 10 minutes at 350F or until golden around the edges. You can re-roll/cut the excess dough. Cool completely. Decorate (I used melted coconut butter + matcha for the “glaze”) and enjoy!

GINGERBREAD BLENDER ICE CREAM with molasses and spices and copious cookie crumbles of course🍪 Recipe below, happy friday!

4-5 frozen bananas
2 tbsp molasses
1/2 tsp ground ginger
1/2 tsp ground cinnamon
1/2 tsp vanilla extract
1 tsp lemon juice
Gingerbread cookies, crumbled (link to my fave vegan/gf recipe in my stories!)

Blend everything except the cookies in a high speed blender or food processor until creamy and smooth. Add half of the cookie crumbles. Blend briefly to combine. Spread into a shallow pan or dish. Sprinkle more cookie crumbles on top. Freeze for at least 2 hours. Scoop into bowls, top with more cookies, enjoy!
