Description
Chewy chocolate chip cookie dough (grain-free!) layered with gooey salty-sweet dairy-free caramel and dark chocolate. This easy no-bake snack packs 10g of protein per bar!

Protein Cookie Dough
- 1 cup (112g) almond flour
- 1/2 cup (60g) unflavored protein powder
- 1/4 cup (80g) maple syrup
- 1/4 cup (65g) Natural SunButter
- 1/3 cup (55g) dairy-free chocolate chips
- 1/2 tsp vanilla extract
- 1/8 tsp salt
- 3–4 tbsp almond milk
SunButter Caramel
- 1/4 cup (65g) Natural SunButter
- 1/4 cup (80g) maple syrup
- 2 tbsps (25g) coconut oil
- 1 tsp vanilla extract
- 1/4 tsp salt
Chocolate Topping
- 3oz dairy-free chocolate chips
- 2 tbsp coconut milk
Instructions
For the cookie dough:
- Combine all the ingredients in a large mixing bowl, and stir with a spatula until evenly combined.
- The almond milk one tablespoon at a time, mixing until the dough holds together but isn’t too sticky.
- Press firmly into the bottom of a loaf pan lined with parchment paper.
For the caramel:
- Whisk everything together until very smooth.
- Pour on top of the cookie dough layer, and smooth to evenly cover.
- Refrigerate 1 hour or until the caramel is firm to the touch.
For the chocolate:
- Microwave the almond milk for 1 minute on high.
- In a medium size mixing bowl, pour the heated milk over the chocolate chips.
- Cover with a piece of foil, and let stand for three minutes.
- Then whisk until completely melted and smooth.
- Pour on top of the caramel layer, spreading even to cover.
- Refrigerate for at least 4 hours before carefully removing from the pan and slicing into bars.
