Description

Soft-baked, sweet, buttery Chunky Monkey Cookies full of dark chocolate chips and walnuts. Grain-free or oat flour, so they’re vegan and/or paleo!

Instructions

  1. Preheat the oven to 350ºF.
  2. Stir together the banana, coconut sugar, almond butter, and vanilla.
  3. Add the dry ingredients and mix to combine.
  4. Fold in the walnuts and chocolate chips.
  5. Scoop/roll onto a lined baking sheet.
  6. Press lightly to flatten.
  7. Bake for 10-12 minutes at 350ºF.
  8. Cool for 10-ish, then eat.
  9. Store in an airtight container in the fridge or freeze for longer storage.

Notes

*You can also make them with applesauce or pumpkin puree.
