Mango Ginger Muffins

Ingredients

  • 1 1/2 cup oat flour
  • 1/2 cup coconut sugar
  • 1 ripe banana
  • 3/4 cup non-dairy milk
  • 1 tbsp baking powder
  • 1 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 3/4 cup frozen mango chunks

Instructions

  1. Preheat the oven to 350F.
  2. Blend the banana, coconut sugar, and non-dairy milk.
  3. In a large mixing bowl, combine the flour, baking powder, and spices.
  4. Add the wet mixture and stir to combine.
  5. Gently stir in the mango.
  6. Spoon into a muffin pan lined with paper liners.
  7. Bake for approximately 20 minutes at 350F.
  8. Let them cool before removing from the pan.
  9. Keep in the fridge.
