Description
The easiest yummiest oatmeal chocolate sunbutter cookies you don’t need to bake. A perfect vegan gluten-free snack or healthy dessert!
Ingredients

- 1/4 cup (50g) coconut oil
- 2 tbsp (30g) almond milk
- 1/2 cup (125g) Crunchy SunButter
- 1/3 cup (105g) maple syrup
- 1 tsp vanilla extract
- 1 1/4 cup (100g) rolled oats
- 1/3 cup (60g) chocolate chunks or chips
Instructions
- In a saucepan combine coconut oil, almond milk, SunButter, maple syrup, and vanilla.
- Bring to a boil, boil for 2 minutes stirring constantly.
- Remove from heat and immediately stir in the oats.
- Scoop cookies onto a lined baking sheet (a cookie scoop works best here). Top each with a few chocolate chunks.
- Refrigerate at least 1 hour until firm.
- Eat! Keep leftovers in the fridge.
