Description
Date bark meets stuffed dates in a new sweet snack: smashed dates! With a caramel-y base, creamy “nutty” middle, and salted chocolate shell. Or get creative with a crunchy, fruity, or high protein option!

- 12 medjool dates
- 1/3 cup (85g) Creamy SunButter
- 1/2 cup (80g) dark chocolate chips
- Flakey salt for topping
Optional variations (makes about 6 of each):
- 1/4 cup puffed quinoa (or your favorite cereal)
- 1/4 cup freeze dried strawberries (or any freeze dried fruit)
- 1/4 cup Creamy SunButter + 1/3 cup nondairy yogurt + 1 scoop vanilla protein powder
Instructions
- Line a pan with wax paper set aside.
- Slice open each date and remove the pit. Place sliced side up on the pan, and use a cup or jar to firmly press the date into a flattened circle.
- Microwave the SunButter for 30 seconds to soften (unless it’s already runny). Spoon about 1 tablespoon in the middle of each date.
- Melt the chocolate chips. Spoon the melted chocolate on top of the SunButter to almost completely cover.
- Top with a sprinkle of flakey salt.
- Refrigerate 1 hour or until chocolate is set.
- Keep leftovers in the refrigerator in an airtight container.
- For the variations: Add the cereal and/or freeze dried fruit in between the SunButter and chocolate layers. For the protein option, stir together the SunButter, yogurt, and protein powder. Spoon on top of the dates in place of the SunButter layer and then coat with chocolate.
