I don’t know about you but I am loving the summer fruit scene right now, especially berries. On oatmeal. On nicecream, On their own. Those sweet juicy morsels are marvelous every which way.
And I am also loving all the berry-based recipes that have been popping up!
Today we are focusing on just one berry. One very blue berry. Well purple when blended. It pretty much just claims the entire tail-end of the rainbow.

Honestly I think I could’ve made an entire roundup of just blueberry muffin recipes. I encountered so many vegan variations while putting this post together, each with their own delicious character. I thought variety would be more fun though, but I promise I snuck in a few muffins too!

Ohh this is great! It will be my first summer living in Sweden and I know we get blueberries everywhere so I am pumped to see this! All the recipes are great but I have to say the blueberry applesauce and the blueberry sweet potato for some reason had me looking twice! Love it.
The sweet potato!! I know that’s the one that really had my mouth watering too. It’s something I wouldn’t think of either, but looks so yummy <3 Blueberries everywhere sounds wonderful, plus fresh local ones always have so much more flavor! I'm sure you will make the most of them 🙂

Oh my goodness, look at all of this blueberry amazingness!! So much beautiful color here, I’m drooling over all the gorgeous pics! Thank you so much for including my Blueberry Cream Cheese! My daughter loves blueberries so much and eats them daily on her oatmeal and sometimes in a fruit bowl with bananas. I don’t eat blueberries on their own but they are delicious in muffins, pancakes and of course, cream cheese, haha. One of my favorite way though is in a smoothie, so much delicious sweetness. What a fabulous roundup!
It sounds like your daughter and I would be very good snacking buddies! They are my favorite berry to put in oatmeal, and I too love them with bananas just chopped up or blended. And of course you can’t beat blueberries in muffins. Or with chocolate. Okay bottom line is I really love blueberries lol!! 😀 Your blueberry muffins and pancakes totally amazing too, but the cream cheese is so unique and such a beautiful shade I had to include it!
