Eggnog Oatmeal {creamy, cozy, vegan}
I must tell you a secret…I’ve never actually had eggnog.
I didn’t want my first taste of this nutmeg + vanilla + cinnamon flavor combo coming from a carton with a long list of ingredients and the ambiguous ‘natural flavors’. Homemade is more my style, but why stop at homemade eggnog when you can have homemade eggnog oatmeal?
Of course there’s no egg in this nog because that wouldn’t be very vegan of me, and there’s no sugar either. Medjool dates sweeten this warm bowl of joy. This is the most nutritious form of eggnog I’ve ever seen…and the creamiest bowl of oatmeal too.
Hello, perfect Christmas breakfast…
Maybe I can’t vouch for eggnothenticity, but I can vouch for yumminess. It’s a fabulous flavor medley, perfectly suited to oatmeal!
Eggnog Oatmeal {creamy, cozy, vegan}
- Prep Time: 5 minutes
- Cook Time: 7 minutes
- Total Time: 12 minutes
- Yield: 1 1x
Ingredients
Scale
- 1 1/2 cup non-dairy milk (you could use water, but it won’t be as creamy)
- 6 pitted medjool dates
- 1/4 tsp nutmeg
- 1/2 tsp cinnamon
- 1/4 tsp vanilla bean powder
- 3/4 cup rolled oats
Instructions
- In a blender, combine the non-dairy milk, dates, nutmeg, cinnamon, and vanilla.
- Blend on high until smooth.
- Pour into a saucepan and add the oats.
- Bring it to a simmer. Stir, then reduce the heat to medium-low and cover.
- Cook for 5-7 minutes stirring occasionally until thick.
- Serve with fresh fruit on top and a sprinkle of nutmeg.
Peanut Butter Apple Cider
If the title has you skeptical, just stick with me and keep scrolling because there is warm, sweet sipping ahead.
I’m mish-mashing some beloved flavors together with this winter drink-in-a-jar. I love apple cider and all the wonderful spices that come with it with. And I love apples + peanut butter in almost anything. So my unconventional recipe imagination said “Hey, why not throw it all together?” And I’m so glad I listened.
Warm, fruity, nutty, mmmmmm…..
Peanut Butter Apple Cider
- Prep Time: 5 minutes
- Total Time: 5 minutes
Ingredients
Scale
- 2 cups organic apple juice
- 3–4 tbsps powdered peanut butter (see notes)
- 1/4 tsp cinnamon
- A small pinch each of cloves (these spices are potent, so you don’t need much, nutmeg, and allspice)
- Optional: 1 tbsp maple syrup (or sweetener of choice)
Instructions
- Warm up the apple juice on the stove or in the microwave.
- Blend everything together.
- Taste, and add the optional sweetener if desired.
- Pour into a jar or mug, top with chopped peanuts and cinnamon, and sip!
Notes
You can use regular peanut butter, but it will make for a much thicker consistency.
Lemon Gingerbread Tartlets
Just one more gingerbread dessert before the holidays are upon us…
No I’m not trying to make it summer by posting a light and lemony recipe (although if you think that would work then I’m all for it). Lemon has its place in the winter months as well: right next to gingerbread.
The first time I heard of this sweet + spiced + tart flavor medley I was a skeptical child. But I trusted my mom wouldn’t lie to me, and took a bite of gingerbread mini muffin glazed in sugary lemon glaze. It was a pretty memorable Christmas dessert moment. Gingerbread shot to the top of my favorite Christmas sweets list, easily surpassing sugar cookies and anything with candy cane crumbles on top (but I still love you Peppermint Cookiewiches).
I was expecting the gingerbread crust to be my favorite part of this little tart because I’m gingerbread obsessed. But I’ve gotta say the lemon pudding really blew me away. I love it when my recipes surprise even me!
Lemon Gingerbread Tartlets
- Prep Time: 20 minutes
- Cook Time: 30 minutes
- Total Time: 50 minutes
- Yield: 5 1x
Ingredients
Scale
- CRUST
- 1 1/2 cup rolled oats (ground to flour)
- 1/4 cup coconut sugar
- 1 tsp cinnamon
- 1/4 tsp ground ginger
- 1/4 tsp ground cloves
- 1 tsp fresh ginger (grated)
- 3 tbsps molasses
- 2–3 tbsps water
- FILLING
- 1 3/4 cup non-dairy milk
- 1/3 cup cane sugar
- 1/3 cup lemon juice
- 1 tsp lemon zest
- 3 tbsps cornstarch
Instructions
- Preheat the oven to 325F.
- Mix together the oat flour, coconut sugar, molasses, cinnamon, ground ginger, ground cloves, and fresh ginger in a large bowl.
- Add the water tablespoon by tablespoon until the dough is clumpy and sticks together when pressed.
- Flour your tartlet pans, or line them with parchment paper. Press the dough into the pans. If you don’t have tartlet pans, you can use muffin tins instead.
- Bake the crusts for 22-24 minutes at 325F.
- For the pudding, combine 1 1/2 cups of non-dairy milk (reserving 1/4 cup), sugar, lemon juice, and lemon zest in a small saucepan. Stir to combine. Bring it to a boil.
- While you’re waiting, whisk the cornstarch into the remaining 1/4 cup of non-dairy milk.
- Once the pudding has come to a boil, reduce the heat to medium-low. Add the cornstarch slurry, whisking constantly as you do.
- Continue to cook for another 5 minutes until thick. Whisk frequently to avoid clumps.
- Divide the pudding among the crusts.
- Chill for 4 hours before serving.
