Easy SunButter Chocolate Mousse with the dreamiest texture you won’t be able to resist digging your spoon into, for dessert or a protein-rich snack!

It’s the dreamiest thing you can make with four ingredients (three and a half really) whether it’s Valentine’s Day or February 15th or the middle of July. Although I don’t recommend waiting that long, you’re gonna be wanting this goodness in your life long before summer.

I’m having some trouble with words right now because no combination of letters can really do justice to just how heavenly this stuff is. I semi hate the word “mouthfeel”, but if ever I were to use it now would be the time and it would be with a stream of adjectives in front like: light, rich, luxurious, indulgent, divine…

My decadence tolerance is pretty damn high, but with this one even I will say you don’t need a huge serving. The decadence is concentrated, so a small(ish) serving loaded up with lots of light and fruity toppings is the way to do it.

SunButter Chocolate Mousse

Okay but what are these 3.5 to 4 magical ingredients?

  1. Coconut yogurt. The full fat kind. No runny almost-drinkable yogurt, that’s not what mousse dreams are made of. Or greek yogurt if not vegan.
  2. SunButter. The creamy kind that’s a little sweet and has that nutty peanut butter-esque flavor we love so much.
  3. Salt. Yeah there’s some in the SunButter already, but when it comes to chocolate desserts I like a little extra – optional!
  4. Cacao or cocoa powder. Of course. Add more or less to your level of chocolatey liking.

The process is even simpler than you’re probably imagining – bowl, whisk, watch as SunButter turns yogurt into an entirely new and marvelous mousse-y thing before your eyes. If you get the good yogurt, the really thick stuff, you may even have to switch from whisk to spatula halfway through. Yep, that’s the kinda texture we’re working with.

You know what else is really yummy? SunButter mousse without chocolate. I know, I know “without chocolate” are bold and maybe controversial words to ever say. But just the creamy non-chocolate mousse in all it’s straight up SunButter flavored glory…GOOD STUFF.

Or if you want to experience both, do what I did and take out half before adding the cocoa powder. Bonus points for the fancier two-toned look when layered in a glass jar even though it’s barely more work.

Maybe my favorite part of this SunButter Chocolate Mousse is how well it showcases toppings. Jk the texture is definitely my favorite part, but it’s top-ibility is nice too.

I kept it classic and holiday apropos with strawberries and chocolate chips, but don’t think my mind didn’t wander to blueberries or chopped hazelnuts or whipped coconut cream or cookie crumbs or granola or chocolate sauce or crushed pretzels or…well you get it.

Description

Easy SunButter Chocolate Mousse with the dreamiest texture you won’t be able to resist digging your spoon into, perfect for dessert or a protein-rich snack!


Ingredients

Scale
  • 1 cup (240g) full-fat coconut yogurt*
  • 1/4 cup (65g) Creamy SunButter**
  • Pinch of salt
  • 2 tbsp cacao or cocoa powder
  • Sliced strawberries and chocolate chips for topping

Instructions

  • Whisk together the yogurt, SunButter, and salt until thick and creamy.
  • Remove half and set aside.
  • Add the cocoa/cacao powder. Whisk to combine.
  • Layer the SunButter mousse and SunButter chocolate mousse into jars with berries and chocolate chips (or toppings of choice).
  • Enjoy!

Notes

*Or greek yogurt if not vegan. Or the cream from a can of full fat coconut milk.

**I used the creamy variety of SunButter, which is lightly sweetened. If using an unsweetened variety either use a sweetened yogurt or add 1-2 tbsp sweetener of choice (but a liquid sweetener will make the mousse thinner).

      I used the Coyo brand (linked in the recipe card) so it’s super thick and creamy! I tested a batch with the GTS Cocoyo and that worked really well too.

    Anyone who procrastinates about making v-day dessert is WINNING this year because this looks better than any fancy pre-planned long ingredient confection! And I just happen to have a fresh jar of SunButter staring me in the face =)

    Sunbutter and COYO yogurt are two of my staples, so you better believe I jumped all over this recipe right away!! It took me forever to hop on here to leave some feedback, so I apologize. This was insanely decadent, ridiculously rich (in a good way), and ultra creamy….so, yeah, I was in heaven! Since we buy the unsweetened sunbutter, I did add a tiny drizzle of maple syrup and it was perfect. I actually used Coyo’s vanilla bean yogurt…have you tried that?? Whoa. SO. GOOD. I love how easy this was to whip up and that pinch of salt is perfection. And chocolate chips sprinkled on top just added to the decadence 😉 Never in a million years would I have thought to combine sunbutter + coyo, but man is it amazing…and I think the layer without the cacao might have been my favorite (*gasp*). Definitely a keeper recipe! Thank you, Natalie! <3
    P.S. – I abandoned the whisk pretty fast! Ha!! Gotta love that thick COYO!

      Eeeeeee! You have no idea how excited I get when I see a comment from you come through🤗🤗 And (as usual) we share the coyo and sunbutter love, I’m so obsessed with both lately too. I love the vanilla bean one too, that with strawberries and chocolate chips has been my go-to fast dessert lately❤️ But I am so so happy you loved the mousse! Isn’t it super rich?? I rarely meet desserts I don’t want a bucket sized bowl of, but this is one of those where a small serving is perfect. Whaaaaaa…the non-chocolate layer won😮 I’m shocked! But always appreciative of your wonderful feedback! xo

    SunButter finally delivered: CHECK.
    CoYo sourced: CHECK.
    Spatula, bowl and whisks licked clean: CHECK CHECK CHECK!
    This mousse was fabulous! Can’t work out which layer we liked more – they complement each other perfectly (although I need to work on my swirl game). AND (gasp!) this was delicious TOPPINGLESS! The only other thing in my version that differed from yours? My lack of restraint. I could happily eat a bucket-load of this without regret. Now I need to get round to freezing up some coconut milk for the sunbutter soft serve (this recipe knocked that one off the top of my To Do list for its sheer simplicity and speed)! But I’ll definitely be making this one again too!

I am so happy it finally happened🤗🤗 Ha I totally feel you, can’t decide if I prefer the chocolate or straight up SunButter flavor better, I find myself making both by themselves all the time. And WHOA no toppings at all?!?!     For this one I combined two recipes of yours. For the bottom, the SunButter layer, I used peanut butter instead of the SunButter (I did not have it but I am going to buy it very soon :)) mixed with Greek yogurt and two tee spoons of rice Sirop. For the second layer, the chocolate one I used your recipe for “Vegan chocolate pot” (chocolat, dates and almond milk). On the top I added some peanut and chocolate chips. The result was interesting, two different textures combined at ones. I definitely enjoyed it :).

    Ah-MAZING! Just finished one serving of this wonderful mousse.
    It was so good!! So smooth and paired so well with the strawberries. I was browsing your site for an afternoon snack in mousse-style and when i saw i actually have the ingredients for this in my fridge, woaaaa, YAY!!!

    Saving the recipe, it’s delicious and so easy to make. I was licking even the whisker and spoon before washing them, not letting anything to waste :)).

Blueberry Walnut Coffee Cake! THE coffee cake for Blueberry Walnut Coffee Cake! THE coffee cake for cozy mornings while we count down days until spring☀️ Vegan and grain-free with an ultra moist fluffy crumb! Recipe below…

Cake
-3/4 cup (180g) non-dairy yogurt
-1/2 cup (125g) almond butter or tahini
-1/2 cup (160g) maple syrup
-1 tsp vanilla extract
-1/3 cup (40g) coconut flour
-1/3 cup (40g) tapioca flour
-2 tsp baking powder
-1/4 tsp salt
-1 cup blueberries (fresh or frozen)
Streusel
-1/4 cup (50g) coconut oil
-1/4 cup (35g) coconut sugar
-2 tbsp (15g) coconut flour
-1 tsp cinnamon
-1/4 cup (30g) chopped walnuts

Preheat the oven to 350F. Whisk together yogurt, nut butter, maple syrup, and vanilla. Add dry ingredients and mix to combine. Gently fold in the berries. Spread into a greased or lined baking dish (mine was 9x6”). In a small bowl combine all the crumble ingredients. Mix with a fork until clumpy. Sprinkle evenly over the top of the cake batter and press in gently. Bake for 38-40 minutes (the center should feel firm to the touch when it’s done). Remove from the oven, cool for at least 30 minutes before slicing.

Vegan White Chocolate Valentine’s Truffles
-1 package @emmysorganics Dark Cacao Coconut Cookies
-1/4 cup (65g) almond or peanut butter
-1/3 cup (60g) dark chocolate chips, melted
-Pinch of salt
-1/2 tsp vanilla extract
-8oz vegan white chocolate.
-Optional: natural pink sprinkles + 1/4 cup more melted dark chocolate for topping

Melt the white chocolate. Pour a small spoonful into the bottom of each cavity of the mold, and tilt to coat the bottom and up the sides of each heart. Freeze. Set aside the remaining white chocolate. Melt the dark chocolate chips. In a food processor combine the Dark Cacao Coconut Cookies, almond/peanut butter, melted chocolate, salt, and vanilla. Process until smooth, it should be the consistency of a thick brownie batter. Place about 2 tsps of the chocolate mixture into each heart and press to flatten. Cover with remaining melted white chocolate. Chill until chocolate is set. Carefully remove from the molds. Optionally drizzle with more dark chocolate and top with sprinkles. Enjoy!

Four ingredient chocolate crumb crust. Three ingredient date-sweetened cream filling. Its truly TOO simple and TOO good❤️

Crust
-2 cups almonds (or nuts of choice)
-1/2 cup cocoa powder
-1/2 tsp salt
-1/4 cup coconut oil
Filling
-12oz unsweetened chocolate, melted
-3 cups non-dairy milk 
-1 cup (10-12) pitted medjool dates (@ndmedjooldates are my favorite!)

Blend almonds, cocoa powder, and salt. Add the coconut oil. Blend until the texture is moist and crumbly. Press into the bottom of a pie pan and up the sides.

Blend the milk and dates on high until very smooth. Add melted chocolate and blend until combined. Pour into the crust and smooth the top. Refrigerate (creamier more like a pudding/mud pie) or freeze (firmer texture) overnight, or for at least 8 hours. Slice and enjoy!

Crust
-1 package Emmy’s Organics Dark Cacao Cookies
-1/4 cup (30g) almond flour
-2 tbsp (50g) coconut oil
Filling
-2 cups (360g) raw cashews, soaked 3+ hours then drained
-1 cup (240g) full fat coconut milk
-1/3 cup (105g) maple syrup
-2 tbsp lemon juice
-1 tbsp lemon zest
-1 tsp vanilla extract
Swirl
-1 1/2 cup (180g) fresh raspberries
-2 tbsp coconut sugar
-1-2 tbsp water

Combine crust ingredients in a food processor. Process until cookies are broken down and mixture begins to clump together. Press firmly into the bottom of a loaf pan lined with parchment paper. Blend the filling ingredients until very smooth and creamy. Pour on top of the crust. Combine berries, coconut sugar, and water in a small saucepan. Simmer over medium-high heat for 5-7 minutes stirring frequently until it begins to thicken and become syrupy. Smash with a fork until the berries are mostly broken down.  Spoon on top of the cheesecake mixture and use the back of a spoon to swirl. Freeze overnight. Slice into bars and enjoy. Keep leftovers in the freezer.

This is my fave vegan and paleo recipe—super moist and tender with almond flour, heavy on the molasses, with a pop of lemon, and they’re oil-free!

Ingredients
-1/2 cup coconut sugar
-1/4 cup almond butter (or any nut/seed butter)
-1/4 cup molasses
-1 tbsp lemon juice
-2 tsps ginger
-1 tsp cinnamon
-1/4 tsp cloves
-1/2 tsp baking soda
-1 tsp vanilla extract
-2 cups almond flour (oat flour option linked in my bio!)

Whisk coconut sugar, almond butter, molasses, and lemon juice until combined. Add the rest of the ingredients and mix/knead to form a ball of dough. Roll out the dough to 1/4 inch thickness between two pieces of wax paper. Chill dough flat for 30 minutes. Cutout cookies with a cookie cutter, then use a spatula to carefully transfer to a baking sheet lined with parchment paper. Bake for 10 minutes at 350F or until golden around the edges. You can re-roll/cut the excess dough. Cool completely. Decorate (I used melted coconut butter + matcha for the “glaze”) and enjoy!

GINGERBREAD BLENDER ICE CREAM with molasses and spices and copious cookie crumbles of course🍪 Recipe below, happy friday!

4-5 frozen bananas
2 tbsp molasses
1/2 tsp ground ginger
1/2 tsp ground cinnamon
1/2 tsp vanilla extract
1 tsp lemon juice
Gingerbread cookies, crumbled (link to my fave vegan/gf recipe in my stories!)

Blend everything except the cookies in a high speed blender or food processor until creamy and smooth. Add half of the cookie crumbles. Blend briefly to combine. Spread into a shallow pan or dish. Sprinkle more cookie crumbles on top. Freeze for at least 2 hours. Scoop into bowls, top with more cookies, enjoy!
