Easy healthy no-bake snacking 3 yummy ways – grain-free banana bread bites, dark chocolate superfood crunch cups, or vegan blueberry lemon froyo bites!
Last week I posted on my Instagram stories to send me any requests for recipes you might be craving a healthier or vegan version of. Aside from all the lemon things, there was a resounding call for NO-BAKE snacks similar to these cake bites. Because I love easy and oven-free recipes too, I got right on that.
Given such a yummy task, my mind started spinning in approximately one gazillion possible snack directions. Honestly I’m proud of myself for narrowing it down to just three, because a gazillion would’ve been quite tricky to squeeze into a 60 second video.
Is this 3-in-1 situation a good format? You tell me.
Are these 3 very good snacks? I’ll tell you: YES.
You could look at this as options. Or you could look at it as variety, a three course snack if you will. Creamy and fruity, cakey and spiced, crunchy and chocolatey – it’s as if they were designed to compliment each other just perfectly.
Regardless of which you choose (all of the above, ahem), they are:
- easy – 10 minutes or less
- healthy – no added sugar and some sneaky superfoods
- vegan and gluten-free with paleo options
- so basically MUST MAKE status
Walnut Banana Bread
This one is the most “baked” tasting of the three because coconut flour is weird but in this case it’s a good kind of weird. The texture of these grain-free bites is somewhere between extra thick banana bread batter and the actual baked bread. Sweetened only with fruit, plus chunky walnuts thrown in because I like my nana bread nutty. I also added cinnamon and a pinch of salt, both of which should be a given when it comes to banana bread – baked or no-bake.
When you start the mixing it’s going to seem impossibly soupy, but the coconut flour will do it’s thickening thing and leave you with a perfectly roll-able dough. (Good-weird, remember?)
These can be refrigerated or frozen. Fridge = more delicate cake-like texture. Freezer = firm like fudge.
Lemon Blueberry Froyo
This one is probably my favorite because a) they are purple b) blueberry + lemon is delicious c) they are made in the blender so you don’t need a single utensil. Oh, and d) you can’t eat them without winding up with purple-melty fingers, which is only a good thing.
It’s also the easiest of the bunch with only three ingredients: frozen blueberries, lemon juice, and coconut yogurt. You can use fresh blueberries, but it might make the cups more icy. And you can use other kinds of yogurt, but the thicker the better.
To make them paleo, either use the Coyo brand of yogurt that is nothing but coconut, tapioca, and probiotics. Or make your own coconut yogurt if you are in a DIY mood. Or substitute the yogurt with coconut cream from a can of chilled coconut milk.
Chocolate Superfood Crunch
These crackly little cups are the most dessert-y of the bunch. Like a crunch bar but amped up with seeds and superfoods.
Instead of using rice cereal, I used puffed millet for the airy crunch. You could use any sort of puffed cereal, or even chopped nuts for a grain-free option. Mixed up with hemp and chia seeds and a spoonful of…SPIRULINA.
Wait, hear me out though! I strongly dislike the seaweed taste of spirulina in smoothies, but cloaked in dark chocolate you can sneak an entire teaspoon of the green stuff in undetectable. I won’t say you HAVE to, but give it a chance.
Which one do you want to try first?

Wowza! I feel like I hit the lottery with 3 recipes in 1 post. I really appreciate your indecisiveness 😉 I don’t enjoy trying to figure out what to make/grab for a snack, so these are perfect – patiently waiting in the freezer to be devoured! I also love the variety because I get bored realllyyy fast!
Haha sometimes indecisiveness is a good thing, right? I feel extra lucky right now having some of each still left in my freezer, although I must admit those chocolate crunch ones are going extra fast 😀
I love all of them and I love your recipes!! I’m always waiting for your next video.
I’d like to ask you if the blueberry snack doesn’t need any sweetener.
Sorry for my English. I’m from Spain. I can read in English but speaking or writing is more difficult for me.
Thanks a lot!!
Hi Sara! First of all I am so happy you are loving the recipes, that makes me very happy to hear 🙂 And no, the blueberry ones really are sweet enough with just the natural berry sweetness. I hope you try them, that one is my favorite of the bunch!
I can’t wait to try that banana bread with the bananas and coconut flour…such a creative idea!!
I hate coconut flour 80% of the time, but for no-bake stuff it’s awesome! It gives this yummy light almost “baked” texture 🙂
Hi Natalie, can I use fresh blueberries instead of the frozen ones? They look so beautifully pink. Would I need to adjust the quantity of the ingredients if using fresh berries? Also could I use fresh strawberries as well?
★★★★★
You can use any berries, although I find fresh to make them a little more icy after freezing. But same quantity if you want to try it 🙂
All 3 of these are just too adorable for words and I love the shot of them all over the plate and those pops of pink throughout!! I don’t think it’s a surprise and more a given, but I’m definitely raising my hand to the chocolate ones, haha! Crunchy and chocolatey has my name written all over it. Nothing beats having options though, especially 3 easy quick ones!! I love that depending on which mood we are in, we can have an option…feeling cakey, hey banana bread, feeling fruity or feeling decadent!I need to get me some puffed millet stat. That stuff looks and sounds amazing. Something about the combo of crunchy in a dessert just makes it that much more epic all around!!
So I really truly loved the purple ones most (or so I thought), but I have to admit of all the leftovers the chocolate ones were definitely gone first ha😆 I cannot resist crunchy-filled chocolate things🍫🍫 Ooh yes, definitely try puffed millet. I love it as a topping, and it’s pretty darn cheap too!
The banana bread ROCKED! I replaced one of the bananas and some of the coconut flour and walnuts with cashews and peanut butter. It was SO GOOD!
That sounds AMAZING. Adding peanut butter is always a good idea🤗 I am so happy you liked them, thanks for the feedback Sacia!
I just had an interesting thought — isn’t freezing a lot like baking? I mean, they’re both exposing ingredients to an extreme temperature to get it to a particular consistency one couldn’t achieve without an over/freezer (or a fire/blizzard, I guess).
A good thing to compare it to is this thing called “rolled ice-cream.” You pour the ice cream base on this freezing-cold thing that’s kind of the arctic equivalent of a skillet, and you sort of “cook” the stuff into ice cream. It’s kind of like making an omelet, almost.
Anyway, just a thought to chew on next time you eat ice cream. These look amazing! I am definitely trying the blueberry things. Blueberry + lemon = amazing!
That is such an interesting thought, and in a way…yeah! The opposite of baking and at the same time quite similar especially if we are talking really extreme cold temps. I have seen rolled ice cream, still want to try it, but it’s an awesome concept. Thanks for sharing😊
Can I use regular flour for this?
Since you are not baking them, I don’t recommend it. Sorry!
What about oat flour? Basically blended oats
That is fine to eat raw, but will make them more dense and chewy than the coconut flour. Coconut flour has this way of making no bake things really light and “baked” like that no other flour quite does😊
