Looking for an easy sweet treat (but still healthy!) breakfast? Try this air fryer cinnamon roll baked oats recipe with all the fluffy gooey goodness of a Sunday morning but ready in just 15 minutes. With a gluten-free vegan-friendly blender batter, gooey cinnamon swirl, and sweet glaze drizzle!

When it’s a Monday morning with no extra time but you want it to taste like a Sunday morning with luxurious amounts of time, you make oatmeal taste like a cinnamon roll in the air fryer in just 15 minutes! The blender batter is full of fiber from the oats, natural sweetness from the banana, and yummy cinnamon and vanilla flavors. Then comes the sweetest part – an almond butter maple cinnamon roll swirl on top that caramelizes and bakes in to be ridiculously yummy and makes every bite feel like a pastry indulgence. Oh and the glaze! It’s not a must, but if you really want that full cinnamon-roll-on-a-Sunday-morning experience I do recommend adding that drizzle.
How To Make Cinnamon Roll Baked Oats In The Air Fryer
This recipe is easily gluten-free and dairy-free, with a tested vegan and egg option. Both work deliciously well, the egg version will rise slightly more. The batter comes together in the blender to grind those oats into “flour” sized pieces so you get a cake-y vs oatmeal texture.
Gluten-Free Ingredients For The Baked Cinnamon Oats
- Rolled oats. A.k.a. old fashioned oats, or quick oats would be totally fine too since we are blending them up anyways. Measuring by weight will be most accurate to make sure you don’t accidentally get too much (dry cinnamon roll) or too little (wet/uncooked in the middle cinnamon roll).
- Ripe banana. This is the only sweetener in the batter, so make sure it’s super spotty and sweet. You only need half, so throw the other half in the freezer for a smoothie another day.
- Milk of choice. I used coconut milk, but any kind of dairy or non-dairy is fine.
- Nut butter. Or a neutral flavored oil like avocado oil. I like almond butter personally.
- Baking powder, vanilla, cinnamon, and salt. For flavor and rise and the basic baking stuff.
Step-By-Step Making The Batter And Cinnamon Swirl
For the batter, add everything to the blender (liquids first for easiest blending!) and blend until smooth-ish. Doesn’t need to be perfectly smooth, a little lumpiness is okay, you don’t want to over blend because that could turn the batter gummy. I recommend about 15-30 seconds on medium-high speed. After it’s blended, pour this batter into a greased ramekin or mug filling it about 3/4 of the way because it will rise quite a bit.
Now while your air fryer preheats, let’s make the cinnamon swirl. In a small bowl, whisk almond butter with maple syrup and lots of cinnamon. It should be thick but drizzle-able, like a caramel sauce consistency. I used a squeeze bottle to create a perfect swirl on top. You could use a ziplock bag with a corner snipped off as a homemade piping bag, or even just drizzle it over top with a spoon and not worry about perfection.
Baking In The Air Fryer
Once the air fryer is hot, pop it in and set the timer for about 15 minutes at 300°F. When you open the drawer after 15, it will have puffed up beautifully like the baked cinnamon pastry it was inspired by and the scent is wonderfully inviting too. Be careful, it will be quite hot so use a towel or pot holder to carefully remove from the air fryer.

Making The Dairy-Free Glaze
You could stop right here, grab a spoon, and dig in as is. Or! Take 2 extra minutes to whisk together this dairy-free drizzly glaze for topping. All you need is powdered sugar and a little bit of milk whisked together. I like to drizzle it on when the oats are still slightly warm so it melts in, hardens, and then crackles with each spoon dive. Optional, but pretty dang delicious.
Tips For Substitutions And Variations
- This basic baked oats base could be made countless ways: with blueberries or raspberries mixed in, with added cocoa powder for a brownie-ish experience, with peanut butter as the nut butter and chocolate chips mixed in, with protein powder swapped in for some of the oats for an extra nutrition boost.
- To add an egg to this cinnamon roll recipe, simply reduce the milk by about half and add one large egg. I also usually skip the nut butter/oil in this case, but it will be fine either way.
- For an alternative swirl option, mix together 1 tbsp melted coconut oil (or butter even) + 2 tbsp coconut sugar + 1/2 tsp cinnamon. It will get a little more lost in the oats, but still tastes so delicious and may better suit what you have in your pantry.
