Chocolate Cereal Crust
If you don’t know by now that I am obsessed with using cereal (and/or granola) to create a cookie-like crumb crust (example A and example B and example C), then allow me to introduce you to this little crispy crunchy hack.
Gluten-Free Crust Ingredients
- Your favorite cereal. Gluten-free if necessary. A chocolate cereal would make it double-y chocolatey, which we definitely don’t hate, but plain is fine too since there is cocoa powder in there. Personally I used chocolate rice crispies for this recipe. Just don’t used a puffed cereal or your crust will turn out soggy.
- SunButter. To bind it altogether. I’ve used coconut oil here as well, but SunButter keeps it nut-free and still perfectly crunchy.
- Cocoa powder. You can skip it if your cereal is already chocolate.
- Maple syrup. Or liquid sweetener of your choosing, just a little bit.
No-Bake SunButter Pie Filling
Now this is the part where things get reeeeeeeeeal DREAMY. And fluffy and whipped with rich sunflower butter flavor and a hint of vanilla. But it’s so so easy.
Dairy-Free Filling Ingredients
- Coconut cream. Make sure your can of coconut milk is chilled for at least 24 hours and then scoop out just the thick stuff. And whip that together with…
- SunButter. Our star. Our no-bake pie bar queen. I opted for the no-sugar added variety, it’s perfect for baking.
- Maple syrup. Are you sensing a trend yet? I tried to keep the ingredient list short so you don’t need a thousand different pantry things.
- Vanilla extract and salt.
Dark Chocolate Ganache Topping
Because that dreamy filling deserves to be sandwiched by chocolate on all sides. This 2 ingredient vegan ganache is made with dark or semi-sweet chocolate chips melted with your favorite non-dairy milk (I used almond). Stir until smooth and then spread on top of the filling. It won’t set as snappy as straight chocolate, but gives this deliciously rich contrast to the fluffy filling underneath.
Cold, crunchy, creamy, decadent, simple. I don’t think I could adore them any more than I already do, and I cannot wait for you to bite into one too!

Description
Peanut butter pie but make it easy and nut-free. Dreamy no-bake SunButter Pie Bars with a chocolate gluten-free crust and vegan ganache!
Ingredients
Crust
- 3 cups (105g) cereal (I used chocolate brown rice crisps)
- 1/4 cup (20g) cocoa powder
- 1/3 cup (85g) No Sugar Added SunButter
- 2 tbsp (40g) maple syrup
Filling
- Cream from a can of chilled full fat coconut milk (~270g)
- 1/2 cup (125g) No Sugar Added SunButter
- 1/4 cup (80g) maple syrup
- 1 tsp vanilla extract
- Pinch of salt
Ganache
- 6oz (170g) dark chocolate
- 1/4 cup (60g) almond milk
Instructions
- Line an 8×8″ pan with parchment paper.
- Grind cereal in a food processor to a fine crumb.
- Add remaining crust ingredients and process until clumpy.
- Press firmly into the pan. Freeze.
- In a bowl, whip the coconut cream with a hand mixer. Add remaining filling ingredients and continue to whip (or blend but it won’t be quite as fluffy) until combined.
- Spread on top of the crust. Freeze.
- Melt dark chocolate with the almond milk. Stir until smooth.
- Spread on top of the SunButter filling. Freeze overnight.
- Slice and eat!
