It’s my birthday, and I revamped my impossibly healthy but decadent CHOCOLATE CUPCAKES for the occasion🧁🍫🥳 Made with just 8 easy ingredients—no sugar, gluten, dairy, or eggs!

INGREDIENTS
-1 cup medjool dates, pitted (200g or about 12)
-1 cup (240ml) water
-1/3 cup (30g) cocoa powder
-2 tsps baking powder
-1 tsp vanilla extract
-1/4 tsp salt
-1 cup (120g) oat flour (or all-purpose)
-1/4 cup (50g) coconut oil, melted (or 1/4 cup non-dairy milk for an oil-free option!)

INSTRUCTIONS
Preheat the oven to 350°F. Line a cupcake pan with 9 paper liners.

Combine the dates and water in a food processor, and process to a thick paste—as smooth as possible. Hold a hand over the top spout of the lid when blending, otherwise water may spray out. Add the rest of the ingredients, and blend briefly until combined.

Divide the batter between 9 cupcakes, filling each 3/4 of the way. Bake for 25-28 minutes at 350°F. Remove from the oven. Cool for 10 minutes before removing from the pan, then cool completely on a wire rack before frosting.

RASPBERRY CHEESECAKE STUFFED DATES🩷

Crumb crust, creamy cheesecake, and tart raspberry topping all layered inside a gooey Medjool date and dunked in dark chocolate = the perfect Valentine’s Day bite😍😋

Made with the yummiest Medjool dates from @ndmedjooldates and @edwardandsons Let’s Do Organic Heavy Coconut Cream for the creamiest dairy-free cheesecake filling🫶🏻 Whip up a batch for your favorite person (but be sure to save a few for yourself too!)

CRUST
-1 cup granola
-2 tbsp coconut oil, melted

CHEESECAKE
-4oz dairy-free cream cheese, softened
-1/4 cup powdered sugar (or vanilla protein powder)
-1/2 cup @edwardandsons Let’s Do Organic Heavy Coconut Cream (chilled 24 hours)
-1/2 teaspoon vanilla extract
-1/2 cup freeze dried raspberries

TO ASSEMBLE
-12 @ndmedjooldates Organic Pitted Medjool Dates
-8oz semi-sweet chocolate chips
-1 tbsp coconut oil
-Optional: valentine’s sprinkles

INSTRUCTIONS
Arrange the Medjool dates on a baking sheet lined with parchment paper split open lengthwise.

Combine the granola and coconut oil in a food processor. Blend to a wet sand consistency. Spoon a small amount of the crust crumbs into each.

Scoop out just the solid part from the chilled can of coconut cream. Use a hand mixer to beat together everything except the raspberries for the cheesecake filling. Use a piping bag to fill each date with the cheesecake mixture.

Briefly blend or crush the freeze dried raspberries to coarse crumbs. Spoon into each date on top of the cheesecake mixture. Squeeze each Medjool date semi shut, and refrigerate overnight (at least 4 hours).

Melt the chocolate with the coconut oil. Use a fork to dip each stuffed date in the melted chocolate. Place back on the lined pan, top with sprinkles, and refrigerate until the chocolate is set.

It’s the perfect breakfast, snack, or dessert🍫

INGREDIENTS: (serves 2)
-1/2 cup (70g) chia seeds
-1 can @edwardandsons Native Forest Simple Coconut Milk
-2 scoops (60g) vanilla protein powder
-1-2 tbsp maple syrup or honey (optional)
-2 shots espresso (3oz)
-Pinch of salt
-Vanilla yogurt + cocoa powder for topping

TO MAKE:
Whisk together the coconut milk, protein powder, espresso, salt, chia seeds, and optional sweetener. Cover and refrigerate overnight. The next day, blend this entire mixture on high until smooth and creamy. Divide into 2 jars or containers. Top with vanilla yogurt, and refrigerate for 1 hour. Dust with cocoa powder immediately before serving. Enjoy!

CHRISTMAS TREE DATE BARK💜🎄

An unconventional but adorable holiday sweet treat! This easy alternative to peppermint bark starts with a sweet gooey layer of @ndmedjooldates Organic Pitted Medjool Dates
followed by a pop of purple white chocolate ganache filling made with @friedasproduce Organic Stokes Purple® Sweet Potato. Then triangle transforms into Christmas tree with a layer of melted chocolate to create the trunk, texture, and star. Sprinkle on crushed candy canes or chopped nuts to decorate✨

This festive treat also packs more nutrition than your average christmas cookie with fiber and natural sweetness from the Medjool dates, plus anthocyanin antioxidants from the Stokes purple sweet potato (a key “Blue Zone” food linked to longevity!)🍠🎄

INGREDIENTS:
-15-18 (300g) Organic @ndmedjooldates Pitted Medjool Dates
-1 (~250g raw) @friedasproduce Organic Stokes Purple® Sweet Potato
-4oz dairy-free white chocolate chips
-8oz dairy-free semi-sweet chocolate chips
-crushed candy canes or chopped nuts to decorate

TO MAKE:
Place the Medjool dates in a 16” piping bag and use the bottom of a jar to press into a very flat and thin triangle. Freeze for 1 hour.

Peel, roughly chop, and steam the sweet potato until fork tender (about 15-20 minutes). Drain, reserving the purple water. Blend the steamed sweet potato chunks with 5-6 tbsp of the reserved water until smooth. Set aside to cool. Melt the white chocolate chips. Stir ½ cup of the sweet potato puree into the melted white chocolate. It will become thin as you stir, that’s okay. Refrigerate 1 hour until it has thickened to a thick spreadable glaze consistency. Cut the piping bag off of the Medjool date triangle. Place it on a sheet of wax paper, and spread a thick layer of the white chocolate purple mixture on top. Freeze for 30 minutes.

Melt the semi-sweet chocolate chips. Transfer to a squeeze bottle or piping bag, and fully cover the purple ganache layer in chocolate. Add a chocolate star and trunk to create the Christmas tree shape. Top with crushed candy canes. Refrigerate until chocolate is set, then cut or break into pieces.

CREAM FILLING
-1/2 cup (112g) dairy-free butter
-1/2 cup (90g) marshmallow cream
-1 1/2 cups (180g) powdered sugar
-1 tsp vanilla

COATING
-12oz dairy-free white chocolate chips
-2 tbsp coconut oil

DECORATE
-1/2 cup (60g) powdered sugar
-1-2 tbsp @edwardandsons Native Forest Simple Coconut Milk
-4-5 drops red food coloring
-Green sparking sugar
