Mulberries are one of my favorite raw ingredients. They pretend to be a grain in recipes like this, but they are really a fruit. If I had unlimited funds to spend on ingredients, then I would use them in every recipe and never look at oats again. I would make a huge batch of these cookies every day, because they are that good. But my mulberry supply is finite, so I pair them with only the best of flavor friends, like vanilla.
Random, but interesting, fact: The leaf of the mulberry plant is the only leaf that silkworms eat. What’s the deal with all of these picky animals that only eat one thing: koalas, pandas, whales, and now silkworms, too? If they can survive on just one food for their whole lives, then why do humans supposedly need variety to get all the proper nutrients?
I love 3 ingredient cookies. The ease of “baking” up a batch is a given, but I also love being able to taste every ingredient in every bite. I can detect mulberries, dates, and vanilla, nothing is hidden. And when the ingredients are as tasty and pure as these, I don’t want to miss a single one.
LFRV Vanilla Cookies
Makes 8
1/2 cup dried white mulberries
3/4 cup pitted medjool dates
1 tsp vanilla bean powder
- Combine everything in the food processor until it starts to clump together.
- Roll into balls, and flatten into cookies.
- Keep in the refrigerator.
