My first time experimenting with chickpea flour, and I’d say it was a crispy, fluffy breakfast (or dinner) success. I tested them a few times––varying the ratios for that perfect texture, and trying them both with and without eggs. The recipe includes both options, so perfect if you are vegan or not. Either way they are super tender, not too sweet, full of protein, and easy to make.


I’ve eaten them stacked with syrup and sliced bananas. Generously drizzled in almond butter and buried with blueberries. Messily munched mid-afternoon with a dollop of jam. And re-toasted the next day with a handful of mini chocolate chips sprinkled so they melt right in. No wrong way to go about it!

Ingredients
- 1 1/2 cups (210g) Edward and Sons Let’s Do Organic® Chickpea Flour
- 2 cups (480g) nondairy milk
- ¼ cup applesauce (or 2 eggs if not vegan)
- 2 tsps cinnamon
- 1/4 tsp salt
- 2–4 tbsp coconut sugar
- 2 tsps baking powder
Instructions
- Whisk together all the ingredients.
- Cook in a preheated waffle iron (sprayed with non stick spray) until golden brown.
- Pile them up, add toppings, drizzle with syrup, and eat!
- Refrigerate or freeze the leftovers, and toast to reheat.
