I had leftover cupcakes. I had frozen bananas. I had a sweet craving. So this happened.
I don’t understand the birthday party tradition of cake and ice cream. I barely understand the concept of ice cream cakes. Just think about it for a minute, if the cake part wasn’t there, you would be eating ice cream with frosting…weird and ew! If you find that attractive, please explain the appeal to me, because I am bewildered. Cold and creamy + warm and creamier just doesn’t sound like a good combo in my opinion. But cake – frosting + ice cream I am a big advocate of!
And I have to give a shoutout to my friend Bianca from ElephantasticVegan.com because she totally gets me on this one. Just look at her magnificent cake + ice cream creation!
It’s also a great way to solve the ever-so-common problem of extra, unwanted cupcakes. Or the issue of an overstocked freezer of bananas. #veganstruggles
PrintChocolate + Vanilla Cake Parfait
- Prep Time: 10 minutes
- Total Time: 10 minutes
- Yield: 1 parfait 1x
Ingredients
- 1 Everything-Free Vanilla Cupcake
- 1 Everything-Free Chocolate Cupcake
- 3 frozen bananas
- 1/2 tsp vanilla bean powder (I love Sunfood Vanilla Bean Powder)
- 1 tbsp cacao powder
Instructions
- Cut both cupcakes into large chunks. Set aside.
- Blend the frozen bananas on high until smooth.
- Remove half of the banana ice cream. Stir in the vanilla powder. Place in the freezer.
- Blend the remaining nicecream again with the cacao powder.
- Layer it all in a tall glass and enjoy (additional toppings always allowed)

I fully endorse the combination of cake + ice cream! I’m totally guilty of cramming anything cake-like into a dish with some ice cream and mixing it all together. This parfait looks much more attractive than the late-night concoctions I come up with!

These are so cute Natalie!! I love ice cream, I love cake and I love frosting, but as I’ve grown into healthier versions of desserts that I create…no oils, no white sugars or flours, etc. I don’t find the buttercream type of frostings that appealing anymore…they are just TOO sweet and well, greasy. I don’t like oil. I don’t do banana ice cream since I don’t like bananas but I could totally love cake and ice cream together, YUM!
I’m totally with ya! The thought of buttercream frosting really doesn’t appeal to me anymore…too much oil/fat! Ice cream is so much more light and refreshing! I could totally go for a few scoops of your Dangerously Dark Chocolate Almond Crunch ice-cream in here too 🙂
Um, yeah, I’ll trade you for my jar of dessert any day 😉 This sounds incredible. I’m not entirely sure how an ice cream cake works tbh — never bothered to try it {gasp!} because it’s strange. I’m ok with raw cakes, but to eat a frozen cold baked cake is a little odd. This little treat of yours on the other hand is a great way to have ice cream + cake the right way <3
Ice cream cake is like a 2 layer cake where the top layer is a solid disk of ice cream…but then the entire outside is frosted! It’s gross…ice cream should not be frosted…or in an unnatural disk shape 😀 haha If only these things would ship better then this trade could really happen!

Your parfait is truly perfect to use up some leftover muffins or cakes! I love that your parfait has chocolate & vanilla cake pieces AND chocolate and vanilla ice cream! What a wonderful combination, it looks so pretty!
As you can tell, that Chocolate Lovers cake of yours is still in the forefront of my mind 😉 Ice cream cake involves too much frosting on ice cream…it weirds me out! This sort of parfait is perfect for us bloggers who often have a hodge podge of leftover muffins/cupcakes hanging around 🙂
