Review: Clean Sweets

My review of Clean Sweets by Arman Liew of The Big Man’s World, plus a tasty peak at a few of my favorites from the book so far!

I am really excited to be sharing this book with you today! Maybe even more excited than I was the day it arrived (and trust me, some serious exclamation point overuse went down on that day) because now I have had the chance to dive in, eat from, and get to know this beautiful book.

As I’m sure you already know, Arman is the awesome human behind The Big Man’s World. He also happens to be a good pal and huge support in my life–I wouldn’t be the same blogger that I am without him, and not nearly as efficient a video creator. As official TBMW Videographer (yes, I did just make that up), I am lucky enough to have tasted quite a few of Arman’s recipes. Even being very familiar with his signature dessert-for-breakfast style, I was absolutely blown by the creativity and novelty in this book. Just a quick flip through will leave you in complete craving overwhelm, I am sure of it!

Raspberry Mousse with Coconut Flour Crust (p. 66)

When mini marshmallows make an appearance before even leaving the breakfast section…well let’s just say this book gets me. Quick and easy. All sweet. And don’t let the marshmallows fool you, actually healthy too!

Plus there are lots of drizzly sauces and silky frostings that makes things messily more delicious. And so many different creamy spoon-required recipes (my favorite kind of dessert) with all sorts of creative base ingredients—pudding, mousse, cheesecake, ice cream, and more.

Thick and Fluffy Vegan Pancakes (p. 56)

My copy of Clean Sweets hasn’t left the kitchen since it arrived and is certainly not in pristine condition anymore, which I consider a very good sign! I have many cookbooks that never escape the book shelf, but a cookbook isn’t meant to live with books. A cookbook is meant to live amongst the bowls and baking dishes. Cover coated in flour, sticky fingerprints from turning the page with dough-covered hands, creases from using the peanut butter jar as a bookmark—those things are the mark of a true COOKbook. Used and abused, a.k.a. kitchen loved.

I credit that mostly to the fact that these recipes are EASY–one bowl or blender, just 15 minutes or less required for most recipes, and ingredients you most likely already have.

If I see a recipe in a book with a list of ingredients 20+ long, half of which I’d have to go buy and a quarter of which I don’t even know where to buy, it’s not happening. But with this book I could probably make more than half of the recipes in the entire thing without having to go out and buy anything. A few basic flours, interchangeable nut butters, protein powder of choice, and other always-on-hand basic healthy baking ingredients.

Familiar ingredients transformed into new treats–that is a perfect way to describe it!

Blender Chocolate Muffins (p. 142)

There is plenty of chocolate in these pages, but the fruitier flavors make many appearances too. Banana pudding, berries all ways, lemon cheesecake, and I may or may not have spotted dates near the back of the snack section, just to name a few. Plus some undercover fruit use like applesauce and pumpkin as the healthy base for tastier things.

I have had a few weeks to explore the delicious depths of this book and try out a handful of the many recipes that caught my eye.

A few things I’ve made so far…

The very first thing I made from the book was the Peanut Butter Cup Cereal Pops. And then made them again the next day because I ate the entire first batch snack style and still wanted to test them out with milk. They are just as yummy as they are fun, with milk or without. Sidenote: one bounced away onto the floor while I was styling this shot, and my dog snagged it and then stared me down for the rest of the shoot for more. So they have multi-species approval in my house!

Peanut Butter Cup Cereal Pops (p. 137)

Then there were the Thick and Fluffy Vegan Pancakes which, as much as I hate to admit it, out fluffy-ed my fluffy pancake recipe. Although all that fluffy envy melted right away with the maple syrup drizzle, then I was just in breakfast heaven.

And while we are on the topic of super fluffy foods, the Chocolate Blender Muffins were probably the fluffiest muffins I’ve ever pulled out of my oven. This little impromptu birthday cake situation was actually that muffin recipe made jumbo sized and frosted.

Cool Mint Chip Ice Cream (p. 156)

Frozen yogurt that felt and tasted like I was at a froyo place. Well minus the extensive topping bar, but I can cut my own strawberries and sprinkle on nuts without a tiny dedicated scoop. Or go true Arman froyo-eating style, which is sans toppings anyways. I might suggest making a double batch though because a) easier to blend and b) more frozen yogurt, duh. The first batch I made minty as per the recipe, and devoured it long before I remembered to take a photo. But round two was just vanilla to pair with these gorgeous strawberries in my fridge that needed to be eaten.

And finally my favorite, this-is-totally-genius recipe: Thick and Creamy Mocha Ice Cream! I don’t want to say too much and blow the surprise of this unconventional-but-amazing ingredient list, but if you have the book already please make it. Soon. For me. And yourself.

    Arman is obviously an absolute wizard when it comes to healthy desserts! I was drooling so hard just looking through all of these pics, Nat! You do an AMAZING job as the official TBMW Videographer! I’m totally eyeing the PB cup cereal pops, the raspberry mousse and the mocha ice cream. I could not be any hungrier right now! Such an awesome review with two awesome bloggers involved! <3

      Mini marshmallows are my jam. Actually marshmallows of all sizes, I’m not picky as long as they aren’t made of agar agar or beans.

    Haha, I love the “TBMW” videographer title! In fact, I’m thinking you need to become “TV8” videographer, too, LOL!! I got Arman’s book last week and I swear, it is the cutest little cookbook ever, I’m in love with the beautiful cover! I already made his brownie with the almond flour and it was soooo delicious! I loved the rich dark chocolate flavor. I’m looking forward to making the confetti cookies next. So many amazing treats in his book I was drooling the whole way through it! And those peanut butter pops, omg, have to check if I have one of the flours still so I can make those. Major yum. You did such a beautiful review, I LOVE the video you did showcasing his book. He’s so lucky to have you!!

      TV8 videographer does have a nice ring to it, but I love your videos and want YOU to keep making them so no can do 😀 The cover is gorgeous isn’t it, I love the color scheme. Almond flour brownies–I will have to try those soon! Definitely try the PB pops, they are super simple and too perfectly snackable–luckily it makes a small batch 🙂 Thank you for reading Brandi.     Wow! What a beautiful review, Natalie!! This book looks and sounds so amazing and it’s as if Arman picked the cover with you in mind…purple and dreamy! You have made lots of yummy treats and now I’m SO intrigued by the mocha ice cream 🙂 haha!! I love that your dog approved of the PB pops. You are so busy, my friend – and I am always so impressed and amazed by your videographer skills. I’m so glad that you have Arman in your life – sounds like a beautiful friendship. I’m off to add this book to my Amazon list! xo

      I know right, I feel in love with the cover the moment I saw it! It was a fun task making the video for it, gave me a chance to try out lots of yummy things, although it was so tricky to pick. Recipe development is fun, but recreating without having to worry about measurements is lovely too 🙂 Thank you for reading, and hope you are well <3

    Just tried his vanilla birthday cake. So sweet we couldn’t eat it. I’m a seasoned chef, and so I followed the directions exactly. Not a great texture either. Disappointing.

Blueberry Walnut Coffee Cake! THE coffee cake for Blueberry Walnut Coffee Cake! THE coffee cake for cozy mornings while we count down days until spring☀️ Vegan and grain-free with an ultra moist fluffy crumb! Recipe below…

Cake
-3/4 cup (180g) non-dairy yogurt
-1/2 cup (125g) almond butter or tahini
-1/2 cup (160g) maple syrup
-1 tsp vanilla extract
-1/3 cup (40g) coconut flour
-1/3 cup (40g) tapioca flour
-2 tsp baking powder
-1/4 tsp salt
-1 cup blueberries (fresh or frozen)
Streusel
-1/4 cup (50g) coconut oil
-1/4 cup (35g) coconut sugar
-2 tbsp (15g) coconut flour
-1 tsp cinnamon
-1/4 cup (30g) chopped walnuts

Preheat the oven to 350F. Whisk together yogurt, nut butter, maple syrup, and vanilla. Add dry ingredients and mix to combine. Gently fold in the berries. Spread into a greased or lined baking dish (mine was 9x6”). In a small bowl combine all the crumble ingredients. Mix with a fork until clumpy. Sprinkle evenly over the top of the cake batter and press in gently. Bake for 38-40 minutes (the center should feel firm to the touch when it’s done). Remove from the oven, cool for at least 30 minutes before slicing.

Vegan White Chocolate Valentine’s Truffles
-1 package @emmysorganics Dark Cacao Coconut Cookies
-1/4 cup (65g) almond or peanut butter
-1/3 cup (60g) dark chocolate chips, melted
-Pinch of salt
-1/2 tsp vanilla extract
-8oz vegan white chocolate.
-Optional: natural pink sprinkles + 1/4 cup more melted dark chocolate for topping

Melt the white chocolate. Pour a small spoonful into the bottom of each cavity of the mold, and tilt to coat the bottom and up the sides of each heart. Freeze. Set aside the remaining white chocolate. Melt the dark chocolate chips. In a food processor combine the Dark Cacao Coconut Cookies, almond/peanut butter, melted chocolate, salt, and vanilla. Process until smooth, it should be the consistency of a thick brownie batter. Place about 2 tsps of the chocolate mixture into each heart and press to flatten. Cover with remaining melted white chocolate. Chill until chocolate is set. Carefully remove from the molds. Optionally drizzle with more dark chocolate and top with sprinkles. Enjoy!

Its #nationalmedjooldateday 🥳🥳 I have wayyyy Its #nationalmedjooldateday 🥳🥳 I have wayyyyyy too many medjool recipes on the blog to mention, so I picked this friday-easy, highly-fudgy, personal fave: No-Bake Vegan Chocolate Cream Pie!

Four ingredient chocolate crumb crust. Three ingredient date-sweetened cream filling. Its truly TOO simple and TOO good❤️

Crust
-2 cups almonds (or nuts of choice)
-1/2 cup cocoa powder
-1/2 tsp salt
-1/4 cup coconut oil
Filling
-12oz unsweetened chocolate, melted
-3 cups non-dairy milk 
-1 cup (10-12) pitted medjool dates (@ndmedjooldates are my favorite!)

Blend almonds, cocoa powder, and salt. Add the coconut oil. Blend until the texture is moist and crumbly. Press into the bottom of a pie pan and up the sides.

Blend the milk and dates on high until very smooth. Add melted chocolate and blend until combined. Pour into the crust and smooth the top. Refrigerate (creamier more like a pudding/mud pie) or freeze (firmer texture) overnight, or for at least 8 hours. Slice and enjoy!

Channeling sweet summer energy into this chilly wi Channeling sweet summer energy into this chilly winter week with a Dark Chocolate Raspberry Cheesecake Bar closeup🍫❤️ Swap in any berry you love (big big fan of the tart raspberry tang though😋), but you need a bite of this lush dairy-free filling on top of @emmysorganics dark cacao cookie crust situation. Recipe below…

Crust
-1 package Emmy’s Organics Dark Cacao Cookies
-1/4 cup (30g) almond flour
-2 tbsp (50g) coconut oil
Filling
-2 cups (360g) raw cashews, soaked 3+ hours then drained
-1 cup (240g) full fat coconut milk
-1/3 cup (105g) maple syrup
-2 tbsp lemon juice
-1 tbsp lemon zest
-1 tsp vanilla extract
Swirl
-1 1/2 cup (180g) fresh raspberries
-2 tbsp coconut sugar
-1-2 tbsp water

Combine crust ingredients in a food processor. Process until cookies are broken down and mixture begins to clump together. Press firmly into the bottom of a loaf pan lined with parchment paper. Blend the filling ingredients until very smooth and creamy. Pour on top of the crust. Combine berries, coconut sugar, and water in a small saucepan. Simmer over medium-high heat for 5-7 minutes stirring frequently until it begins to thicken and become syrupy. Smash with a fork until the berries are mostly broken down.  Spoon on top of the cheesecake mixture and use the back of a spoon to swirl. Freeze overnight. Slice into bars and enjoy. Keep leftovers in the freezer.

This is my fave vegan and paleo recipe—super moist and tender with almond flour, heavy on the molasses, with a pop of lemon, and they’re oil-free!

Ingredients
-1/2 cup coconut sugar
-1/4 cup almond butter (or any nut/seed butter)
-1/4 cup molasses
-1 tbsp lemon juice
-2 tsps ginger
-1 tsp cinnamon
-1/4 tsp cloves
-1/2 tsp baking soda
-1 tsp vanilla extract
-2 cups almond flour (oat flour option linked in my bio!)

Whisk coconut sugar, almond butter, molasses, and lemon juice until combined. Add the rest of the ingredients and mix/knead to form a ball of dough. Roll out the dough to 1/4 inch thickness between two pieces of wax paper. Chill dough flat for 30 minutes. Cutout cookies with a cookie cutter, then use a spatula to carefully transfer to a baking sheet lined with parchment paper. Bake for 10 minutes at 350F or until golden around the edges. You can re-roll/cut the excess dough. Cool completely. Decorate (I used melted coconut butter + matcha for the “glaze”) and enjoy!

GINGERBREAD BLENDER ICE CREAM with molasses and spices and copious cookie crumbles of course🍪 Recipe below, happy friday!

4-5 frozen bananas
2 tbsp molasses
1/2 tsp ground ginger
1/2 tsp ground cinnamon
1/2 tsp vanilla extract
1 tsp lemon juice
Gingerbread cookies, crumbled (link to my fave vegan/gf recipe in my stories!)

Blend everything except the cookies in a high speed blender or food processor until creamy and smooth. Add half of the cookie crumbles. Blend briefly to combine. Spread into a shallow pan or dish. Sprinkle more cookie crumbles on top. Freeze for at least 2 hours. Scoop into bowls, top with more cookies, enjoy!
