How To Make SunButter Buckeyes
If it happens to be any month of the year besides October, this recipe doubles as a healthier peanut-free buckeye ball recipe too. No-bake and made with just 7 simple ingredients, they are vegan and paleo friendly.
Healthier Vegan Buckeye Ingredients
- No Sugar Added SunButter. Any variety of SunButter will work in this recipe (even Crunchy would be really yummy!), but given the month and the theme of this recipe ORANGE (a.k.a. No Sugar Added) SunButter felt like the most apropos jar to go with. I also love this variety for recipes in general since it contains nothing but roasted sunflower seeds and salt.
- Maple syrup. Buckeyes are usually sweetened with a couple cups of powdered sugar, but for a healthier swap and a little fall flair we are using maple syrup instead.
- Vanilla extract. Optional, but better with.
- Almond flour. Since we swapped out the powdered sugar, the main dry ingredient in the original recipe, we are replacing it a grain-free combination of almond flour and…
- Coconut flour. In combination with the almond flour, it creates the perfect no-bake bite texture. You could swap for protein powder if desired.
- Salt. A necessary sprinkle in any sweet spooky recipe like this.
- Dark chocolate. Melted for coating, it’s best to add a little bit of coconut oil for just the right buckeyeball dipping consistency.
- Sprinkles. These are the eyeball sprinkles I used. You could use any kind of halloween sprinkle (or Christmas if it’s two months from now!) sprinkled onto the chocolate before it sets instead.
Important Tips for Perfect SunButter Buckeyes
- The dough should be very thick, but not dry or crumbly. The runny vs. thick nature of your SunButter will affect this a bit, so start with just 2 tablespoons of coconut flour and then add the rest only if needed. Or if your dough is too moist add an extra tablespoon.
- Freeze the balls at least 2 hours, but overnight is preferred. The colder they are the easier they are to dip and the faster the chocolate coating will set with less dripping.
- Pop a toothpick in the top (or a metal skewer works really well too if they are quite hard/frozen) to get the perfect dip, it will be a little hard to get in when they are frozen but if they thaw too much they may fall off into the chocolate so work quickly.

Ingredients
- 1 cup (256g) No-Sugar Added SunButter
- 1/4 cup (80g) maple syrup
- 1 tsp vanilla extract
- 1/2 cup (60g) almond flour
- 1/4 cup (30g) coconut flour
- 1/4 tsp salt
- 1 cup (180g) dark chocolate chips + 1 tbsp coconut oil
- Eyeball sprinkles
Instructions
- Whisk together SunButter, maple syrup, and vanilla.
- Add almond flour, coconut flour, and salt. Mix to form a thick dough.
- Scoop/roll into 12 balls.
- Freeze at least 2 hours.
- Melt the chocolate with the coconut oil.
- Use a toothpick to dip each SunButter ball into dark chocolate, coating bottom and sides and allowing extra to drip off. Place on a plate lined with wax paper, and remove the toothpick.
- Press an eyeball sprinkle (or two!) into the top of each. Refrigerate until chocolate is set.
- Store in the fridge.

What I replace almond flour with, we have a nut/wheat allergy?
You could use oat flour, just reduce the amount significantly since it is much more dry than almond. I’d try about 1/4 cup to start and add more only if its too sticky to roll!
