Crispy, crunchy (healthier!) Kit Kat bars with homemade vegan paleo wafers layered between silky dark chocolate. The perfect easy DIY halloween treat!

How could I not post one last homemade candy recipe for you on HALLOWEEN?
It’s one of my long time favorite chocolate bars too, although the challenge of making my own always intimidated me. Crunch bars? Easy. Snickers? Gimme some medjool dates and I got this. Butterfinger? Been there (just) done that.
But Kit Kats. With their multi-layered wafer middle and slender snappy shape and delicately thin chocolate coating. Oh and let’s just go ahead and make them vegan AND paleo too why don’t we. Nbd.

But I did my research. A.k.a. I watched this video, learned a few tips, and then put my own healthier simpler spin on it. And they turned out even better than I expected! I had a couple of friends taste test them (then finished the rest myself before I had to do any more sharing), and they loved them too.

So here’s what we’re working with.
Almonds and coconut. I wanted to keep this recipe grain-free and as wholesome as possible, so these two blended together is the “flour” for the wafer. You could use another type of nut like cashews or hazelnuts even, but I recommend keeping the coconut in there.
Maple syrup and nut/seed butter. I used sunflower seed butter melted with the maple syrup, but something more neutral flavored like almond or cashew butter would even be better. And yes agave or honey would work instead of maple. The key is to melt this – stovetop or microwave – until almost boiling so it’s easier to mix into the dry ingredients and roll out the dough REALLY thin. Then bake and cool.
Hu Gems. Ah yes, the perfect silky chocolate coating. Never have I met a chocolate chip that melts more perfectly. No need to add coconut oil to get that perfect THIN coating, Hu Gems just naturally have the ideal consistency. And of course taste better and are made with better ingredients than any other chocolate chip/chunk too. Too much to love really ♡
P.S. I also spotted them at Whole Foods last week! Or you can still always order online (use code FEASTINGONFRUIT for 20% off).

Did you know that the chocolate between the wafer layers of a Kit Kat is actually made from crushed/melted Kit Kats? So when you see me crush the extra wafer edges and stir them into the melted chocolate – she’s not crazy she’s just done her research.
You want very small crumbs though, otherwise it will mess up the wafer-to-wafer glue effect. And if you don’t want to bother with this, skip it! But it does add extra CRUNCH.

See not so hard. Not so scary. Not just for Halloween. Not for sharing if you are greedy when it comes to really really good chocolate things like me.
Happy homemade Kit Kat making to you!

This is brilliant and I have to try it! I love how you used the edges to make the filling. Masterful!
Less waste and more crunch, its a win win🤗 But gah they are so tasty, can’t wait for you to taste them!
Love your simple clean yummy recipes. Inspiring!

Thank you for the kind words Crissa, I am so happy you enjoy them 🙂
Hii!! Can I use almond flour instead of almonds do you think? I have a bag lying around but no almonds 🙁
Yep that will work!
You kinda blew my mind with the unknown fact regarding the chocolate between the wafer layers. No way? Thanks to you, my chocolate chip stash is too low at the moment to make these 😉 For real though…between the scotcheroos, butterfingers, millionaire shortbread, and brownies, you’ve cleaned me out! HAHAHA! I’m impressed with these pics and the video…I would be way too intimidated to attempt my own version, but looks like you nailed it! These look amazing!!! I wish we were neighbors because we’d happily jump at the chance to be your taste testers or help you eat the trials! Hope you’re having a beautiful weekend! <3
P.S. – I think I need to buy two bags of chocolate chips next Costco trip! xo
Right?! Been eating kit kats all this time and never knew, thank goodness for youtube😂 Lol I have been on a major chocoalte covered everything kick lately, but hey I’m gonna justify that with halloween lol. Much less chocolate and more pumpkin this month…or at least I will try. Wish we were too so I could’ve brought you beautiful humans a batch of these (and told you to grab me a big bag of those costco chips!) Happy monday Mandy❤️
hi, I was so excited to make these for my mom who loves kit kats but mine all cracked and fell apart once I but the layers on and took them out of the fridge. did anyone else have this issue? Natalie, did I work for you your first try? 🙂
thanks for all your creative deviousness. 🙂
xo
I’m so sorry to hear that! My wafer was quite sturdy, perhaps your batter was too dry?
Is there a sub for coconut? These look really good 🙂
You could try more nuts instead of the coconut!
These bars look scrumptious, Natalie! I always adored Kit Kats as a kid. It’s been a LONG time since I’ve ever eaten them, but now I can! Hooray!
Well I hope these hit the spot! Not exactly the same of course, but sooooooo yummy in there own way😋
Mine were easily as tall as they were wide, which is not necessarily a negative, aesthetically or taste wise! I’ve been making a lot of your recipes recently – with the cold weather comes the intensified urge to bake and eat (I guess it’s the primal instinct to be near a fire and thicken my own personal
winter insulation AKA blubber) and they’ve all
been such yummy and fun endeavours. But man, you totally *nailed* this one, Natalie!!! I’m all over those chubby little stacks of alternating crunch and chocolate crunch and am sadness itself that there were only 8 portions from it!

P.S. there was but one downside to these scrumptious slices of heavenly chocolatey crunch – that I can’t justify eating the trimmed excess wafer during the making process! I will be making these again very soon!
Oh trust me, I still managed to save some of the wafer extras for snacking so it can be done😉
Hey. Is there anything I can replace the nuts for because we have nut allergies?
You could try oats instead, I’d recommend reducing the amount to about 1/2 cup since they are a lot more drying/absorptive than almonds.
