Give this ridiculously simple but deliciously genius dessert quesadilla a video/photo update complete with saucy SunButter drizzles and maybe a few extra chocolate chips for next level gooey goodness?
Oh yes, I can do that. I can definitely do that.
I have eaten maybe two quesadillas in all of my life before now. Mexican food (or spicy food in general, zero peppers is my max) is not my jam. But swap spicy for sweet, cheese for chocolate, fill it with fruit, and throw in my favorite sunflower seed butter too? I AM HERE FOR IT.
You know when you are scanning an ingredient list like – yes, okay, mhmm good stuff – so you are fairly confident the finished product will not suck. And it’s pretty short too, because we do not have time for finicky fancy snacks. But no amount of imagining could’ve prepared me for how crazy delicious these ingredients would taste when folded up altogether and pan-toasted to crispy quesadilla perfection.
A list can’t convey the magic that happens when smushing and heat are applied to bananas, SunButter, and chocolate. Might just be the best thing I’ve ever eaten between two halves of a tortilla.
This recipe is SIMPLE. So simple you may be tempted to skip the instructions section. Yup I see you. I see you because I too am the wing it/I got this/non recipe reading type.
BUT. There are a few little things I want to mention before you dive into SunButter quesadilla-ing. Tips really, not rules. And not make or break stuff, just make it better stuff…
- Be generous with the SunButter. Spread that stuff on thick because a) it’s the quesadilla “glue” and b) it’s so so delicious.
- Be generous with the chocolate chips. Because chocolate chips.
- Don’t slice the banana too thin, we want some height to this quesadilla.
- I used creamy SunButter, but any kind will work. For an unsweetened option, this one is my favorite. Or even go crunchy if you’re feeling adventurous.
- A whole wheat tortilla works best. If you are using a gluten/grain free tortilla they aren’t as flexible and more prone to breaking, so I suggest using two tortillas (top and bottom) instead of trying to fold one in half.
- Try strawberries instead of bananas – that’s really yummy too!

Description
Easy SunButter Quesadilla filled with creamy sunflower seed butter, sweet banana slices, and gooey chocolate chips for a yummy snack or healthy dessert!
Ingredients
- 1 8-inch whole wheat tortilla*
- 2 tablespoons Creamy SunButter**
- 1 medium banana, sliced
- 1 tablespoons semi-sweet chocolate chips
Instructions
- Lay the tortilla flat and spread SunButter over the entire surface.
- Arrange banana slices over one half of the SunButter.
- Sprinkle chocolate chips on top of the banana slices, and fold the tortilla in half.
- Spray a large sauté pan with non-stick cooking spray, and heat over medium-low heat.
- Place the quesadilla in the warm pan, and cook until golden brown and crispy on both sides.
- Slice into triangles with a pizza cutter or knife.
- Enjoy!

*Or for a gluten/grain free option, these tortillas are my favorite.
**You can use any kind of SunButter – sweetened or unsweetened.

Yummy snack or healthy dessert…well, I couldn’t wait for snack time or dessert, so I had it for breakfast 😬🙈 to justify it, I did add hemp seeds! 😂 I was randomly craving a sweet breakfast and since I had plenty of leftover tortillas and ripe bananas galore, I had to give this a try! I used the cassava-chia tortillas and followed your tip of using two instead of folding one and it worked really well!! The gooey-ness factor…whoa. I love all of those ingredients on their own, but warmed and melted together makes for a pretty epic combination 😍 And the tortillas got nice and crispy! I have always been a fan of the standard quesadilla, but these might become my new addiction! And this was so filling and satisfying 😋 Another reason why I need to always have a backup jar of SunButter…I’m definitely making this again very soon ❤️

Threw some hemp seeds in there too? Oh well then obviously it’s 100% breakfast appropriate😂😂 Regardless of time of day, I like the sound of that addition! I’m glad those leftover tortillas found a yummy use, and good to know they crisped up just as well. The gooey inside crispy outside contrast is the best, isn’t it😋 Hahaha I currently have 4 jars of SunButter in my pantry sooooooo…I feel you😆 So happy you tried it! (P.S. I already made the trip to whole foods and stocked up on Miyokos butter and cream of buckwheat🤗❤️)
