PB&J PROTEIN GRANOLA🥜🍓 But what if instead of using any sweetener you use the jam/jelly AS the sweetener?

What if you melt that down with peanut butter and use this sticky-sweet mixture to coat the oats and seeds and cereal?

And what if you add in @edwardandsons Let’s Do Organic Unsweetened Coconut Flakes because they toast up so beautifully and are always my FAVORITE part of any granola handful?

And what if you add some protein powder and optional egg whites to make sure every serving delivers 10G OF PROTEIN?

The answer: it’s a very very very good plan👇

DRY INGREDIENTS:
-3 cups (240g) rolled oats
-1 cup (45g) @edwardandsons Let’s Do Organic Unsweetened Coconut Flakes
-1 cup (20g) puffed cereal (quinoa, rice, millet, etc)
-1 cup (125g) mixed seeds (hemp, pumpkin, flax, chia)
-1/2 cup (60g) unflavored protein powder
-1/2 tsp salt
WET INGREDIENTS:
-2/3 cup (170g) creamy peanut butter
-2/3 cup (200g) jam of choice (I used seedless raspberry)
-1 tsp vanilla extract
-Optional: 2 egg whites or 1/4 cup (60g) liquid egg whites
-1oz freeze dried berries (I used raspberries)

HOW TO:
Preheat the oven to 300°F and line a large (18”x13”) baking sheet with parchment paper. Combine the dry ingredients in a large bowl and mix.

In a separate bowl, combine the peanut butter and jam. Melt for 45 seconds on high. Add the vanilla and whisk until smooth. Add to the dry ingredients along with the optional egg whites. Mix until evenly coated.

Spread out evenly on the baking sheet. Bake for 40-45 minutes until golden brown on the edges. Cool at least 10 minutes on the pan before breaking apart (the longer you let it cool untouched, the bigger the clusters will be).

Once the granola is completely cool, mix in the freeze dried berries, crushing slightly (or add just before serving). Store in an airtight container for 1-2 weeks.

EASY PEANUT BUTTER CEREAL BARS🥜 The perfect gooey crunchy sweet snack made with delicious @sevensundayscereal Simply Honey Oat Protein Cereal and just 4 other healthy-ish gluten-free ingredients🍯😋

INGREDIENTS:
-3 1/2 cups @sevensundayscereal Simply Honey Oat Protein Cereal (FEASTINGONFRUIT for 30% off!)
-½ cup honey or maple syrup
-½ cup creamy peanut butter
-1 tsp vanilla extract
-6oz dark chocolate

HOW TO:
Melt the honey and peanut butter together (45-60 seconds in the microwave). Add the vanilla, and stir until smooth. In a large mixing bowl, pour the honey peanut butter mixture over the cereal and mix until evenly combined and coated.

Press very firmly (I like to place a sheet of wax paper on top and use another pan to press down evenly) into an 8×8” pan lined with parchment paper.

Melt the chocolate. Pour a thin layer on top of the cereal bars and spread to cover. Refrigerate overnight before slicing into squares. Keep leftovers in the fridge in an airtight container.

STRAWBERRY SOFT SERVE🍓 One last swirly sweet summer frozen treat before august ends! This dairy-free ice cream is made in the blender without any fancy equipment or churning required, and it comes out just as creamy as can be💗💗 Scoop it in a bowl with your favorite toppings, or swirl into @edwardandsons Let’s Do Organic Sugar Cones for that classic ice cream shop experience🍦

INGREDIENTS:
-15oz can coconut milk
-2 cups (280g) strawberries (fresh or frozen/thawed)
-1 cup (250g) nut butter of choice (I used macadamia nut butter)
-1/4 cup (80g) maple syrup
-1 tsp vanilla extract
-1/2 tsp salt
-Splash of almond milk to blend
-4-6 @edwardandsons Let’s Do Organic Sugar Cones

HOW TO:
Blend the coconut milk with the strawberries. Pour into an ice cream tray and freeze overnight. The following day, blend the strawberry cubes, nut butter, maple syrup, vanilla, and salt with a splash of almond milk (if needed) until very smooth and creamy. Scoop and serve with toppings of choice. Or transfer to a piping bag, and freeze 30-60 minutes until you can swirl into cups/cones.

GOOEY GLUTEN-FREE S’MORES BARS🤎 A buttery blondie cookie bar with flavors of vanilla and cinnamon and “graham cracker” crumbs folded in topped with a sticky-sweet layer of mini marshmallows and gooey warm chocolate chips plus more of that cookie crumble on top. Peak summertime YUM!

These bars are deliciously gluten-free but without having to find gf graham crackers…🫢 Because you know what smells like a graham cracker, tastes like a graham cracker (especially if you add a touch of cinnamon), crumbles like a graham cracker, and s’mores like a graham cracker 👉@edwardandsons Let’s Do Gluten-Free Sugar Cones!

INGREDIENTS
-12 @edwardandsons Let’s Do Gluten Free Sugar Cones
-1/2 cup (112g) dairy-free butter or coconut oil, melted
-2/3 cup (100g) coconut sugar
-1 flax egg (1 tbsp flax meal + 3 tbsp water)
-1 cup (148g) gluten-free flour
-1 teaspoon vanilla extract
-1/4 tsp salt
-1/2 tsp baking powder
-1/4 tsp cinnamon (optional)
-2 cups (110g) mini marshmallows
-1 cup (180g) dairy-free chocolate chunks or chips 
Preheat the oven to 350°F, and line at 8x8” baking pan with parchment paper.

In a mixing bowl, combine the butter/coconut oil, flax egg, coconut sugar, flour, vanilla, salt, baking powder, and cinnamon. Beat with a hand mixer until well combined. In a food processor, grind the sugar cones to coarse crumbs. Remove ¼ cup and set aside. Pour the rest into the mixing bowl and fold with a spatula until evenly distributed throughout the dough. Press the dough into the bottom of the pan.

Top with a layer of marshmallows, then the chocolate chips, then the remaining cone crumbs. Bake for 25-28 minutes at 350°F. Cool at least 30 minutes before slicing.

COOKIES AND CREAM NINJA CREAMI🤎🥥 But make it dairy free and with 30g+ of protein! This cookies and cream ice cream recipe tastes just like the classic, but the CREAM is made with @edwardandsons Native Forest Organic Simple Coconut Milk and the COOKIES are made with a sneaky gluten-free oreo swap. Blender option included too! You can serve it soft serve style or scoop into cones for the perfect summer treat🍦

COOKIE
-1 cup (90g) chocolate granola
-1 tbsp cocoa powder
-1 tbsp coconut oil, melted
CREAM
-1 cup (240g) almond milk
-1/2 cup (120g) @edwardandsons Native Forest Organic Simple Coconut Milk
-4oz (115g) dairy-free yogurt
-1 scoop unflavored protein powder
-1 tbsp sweetener or 2 pitted medjool dates (omit if protein powder is sweetened)
-1/8 tsp salt
-1/2 tsp vanilla extract

INSTRUCTIONS
Grind the granola to coarse crumbs in a food processor. Add the cocoa powder and coconut oil. Process again to a wet sand consistency. Set aside.

Combine all the ice cream ingredients in a Ninja Creami pint container (if using dates, you will need to blend instead).
Use a frother or electric whisk to thoroughly mix. Freeze overnight.

Process on the “light ice cream” setting. Add a splash of coconut milk, and process again on “re-spin”. Add a few tablespoons of cookie crumbs, and process again on “mix-in”. Enjoy!

BLENDER OPTION: Blend the cream ingredients, and freeze in an ice cube tray. The following day, blend in a food processor with a splash of coconut milk to a soft serve consistency. Add the crumbs, and process until incorporated.
