Rice crispy treat meets peanut butter cup in the easiest 5 ingredient sticky snack bar you’ve ever met. What Makes These Cereal Bars The Perfect Snack
My two favorite things about this recipe have to be 1) the FLAVOR and 2) SO easy to make! But there is a lot more to love like:
- Quick 15 minutes to prep – the rest is just popping the in the fridge and waiting
- Gluten-free – since the cereal is made with upcycled oat protein, upcycled non-GMO corn, and cassava starch
- Refined sugar-free – sweetened exclusively with honey (or use THIS cereal and maple syrup instead if vegan!)

Peanut Butter Cereal Bars Ingredient List
Gluten-free, dairy-free, and healthy-ish with just these 5 simple ingredients:
- Cereal. Any O shaped cereal would technically work, but personally I am opting for my favorite cereal from Seven Sundays. All of their products have simple + sustainable ingredient lists you can’t beat, but they taste just like the childhood breakfast classics you love. - Peanut butter. Creamy of course, I prefer a natural unsweetened variety. Make sure you really stir it up first though so it isn’t too oily.
- Honey. Raw honey is my favorite, I usually get the giant bottle from Costco. This natural sticky sweetness compliments the peanut butter perfectly, creating an almost caramel-like sticky gooey-ness.
- Vanilla extract. For a little extra sweetness and flavor.
- Chocolate. Dark chocolate melted and spread on top is the ideal finishing touch to these yummy PB bars. I used a dairy-free 65% dark chocolate bar, but use whatever you love. I like to spread it quite thin so you just get a thin snappy layer.
Tips For Making The Perfect Bars
It’s hard to mess up with such a minimal ingredient list and no baking, but I do have a few tips to make sure your bars come out perfect the fist time:
- When I say press the cereal in firmly, I mean FIRMLY. Ideally lay a sheet of wax paper on top of the cereal and use another pan of similar size to apply even pressure to the whole pan and pack that stuff in.
- Refrigerate, don’t freeze. Freezing with blunt the delicious flavor, take away that delicious gooey factor, and make the chocolate topping shatter instead of slice.
- Store the bars in the fridge. In an airtight container is best, but they definitely need to be kept chilled or they will become too soft and sticky. They will easily last 1-2 weeks this way.
Ingredient Substitutions And Ideas
This recipe is delicious as written, but it’s also quite flexible. You could swap in another of Seven Sundays’ oat protein cereal flavors like Chocolate Sea Salt or Super Fruity and instantly have an entirely different snack flavor. Or even one of their grain-free Sunflower Cereal varieties. You could swap the peanut butter for SunButter or tahini to make them nut-free, or almond butter if you like that better. You could use maple syrup instead of honey to make then vegan. And you could even add nuts or chocolate chips or freeze dried fruit or other mix-ins to the cereal mixture to mix it up and make them yours.

Description
Delicious and easy no bake peanut butter cereal bars! The perfect gooey sweet crunchy snack to indulge your sweet cravings with just 5 healthy-ish gluten-free ingredients.
Ingredients
- 3 1/2 cups (140g) Seven Sundays Simply Honey Oat Protein Cereal (FEASTINGONFRUIT for 30% off!)
- ½ cup (160g) honey or maple syrup
- ½ cup (130g) creamy peanut butter
- 1 tsp vanilla extract
- 6oz (170g) dark chocolate
Instructions
- Melt the honey and peanut butter together (45-60 seconds in the microwave). Add the vanilla, and stir until smooth.
- In a large mixing bowl, pour the honey peanut butter mixture over the cereal and mix until evenly combined and coated.
- Press very firmly (I like to place a sheet of wax paper on top and use another pan to press down evenly) into an 8×8” pan lined with parchment paper.
- Melt the chocolate.
- Pour a thin layer on top of the cereal bars and spread to cover.
- Refrigerate overnight before slicing into squares. Keep leftovers in the fridge in an airtight container.
