What I Eat in a Day (Smoothie Spree!)

What I Eat in a Day (Smoothie Spree!) - FeastingonFruit.com

I haven’t been feeling very motivated to make the usual recipe videos lately. It’s a lot of editing. It sometimes requires making the recipe multiple times, to get all the pictures and video. It means I can’t bake after dark (which comes so much earlier now!). And frankly I think you know how to make applesauce without a visual guide. I’d rather spend more time on the pictures and more time making new recipes.

But I still want to make videos, just simpler ones. That might mean more low key recipe style videos, but this week I filmed a little what i eat video and had some fun with the editing. It features a lot of snacking (because that’s just how I eat) and a lot of smoothies. I didn’t realize I loved smoothies till about a month ago, but since then I’ve been drinking A LOT of them! It’s getting a little out of hand. But they are so easy. And yummy. And digest super well (always a bonus!).

What I eat in a day…

I don’t usually post on a whim like this, writing the post just minutes before hitting publish. This feels a little weird to me. But good weird. Spontaneous weird. I need to be more spontaneous. What I Eat in a Day (Smoothie Spree!) - FeastingonFruit.com

Do you ever get a little smoothie obsessed and want to drink them for all your meals?

Smoothie pouring never looked so sexy! This should be made into a full length major motion picture! And apple towers! Hot damn! And two posts in one week! Your are blowing my feasting on fruit mind! Although I think we should call you feasting on smoothies 😉 xoxoxo

75 mins of smoothie pouring on the big screen, I can just see it now 😀 haha The apple tower was a happy accident, when I tried to recreate it for the photo it took me like 20 tries to get them to balance again. I hate to say it, but I think I have left the anti-smoothie club :/ Thanks girl <3

Love the video! It’s so fun 🙂 I also get on smoothie kicks and want a smoothie for every meal sometimes. It seems like I either don’t drink them at all or can’t stop drinking them 😉 what do you think of the Square bar that you showed? It looks yummy and I’m thinking I should buy some.

Thanks Mel! Oh I’m sure I’ll burnout on the smoothies eventually, everything seems to go in cycles that way 😀 And Squarebars are amazing!!!!! I defitniely recommend them, I just tried them recently and am in love. That’s the mint one and it is probably my second favorite. The chocolate crunch one is my absolute favorite. They kinda remind me of a 3 musketeers bar or something, but with protein. They are quite sweet though, just so you know. Haven’t been able to find them in store, so I ordered mine on Amazon.

Awesome, thanks! I think I’ll just buy a few to try since I often find things too sweet for my liking.

Nooo I don’t know how to make apple sauce when you don’t provide a video!! Just kidding, but you know I’m a big fan of your recipe videos! I really enjoyed this one too, it’s so interesting to see what other foodies are eating 😀 I’m completely the opposite with smoothies – I never would sacrifice a “real” meal for a smoothie 😀 But hey, maybe that changes too. I’ll have to give them a chance more often. I loved the rewind-parts in the video – they made it look so modern and cool 🙂

LOL I’m so sorry to leave you lost and applesauce confused 😉 haha And I used to be the exact same way! Like “No I love chewing too much for smoothies!!” Don’t know what changed really, melon season ended and fruit got less good so I made the switch I guess. I can’t go without some sort of fruity meal! I had lots of fun with editing, thanks for noticing 🙂

It’s amazing how quickly the darkness of the evenings creeps up on us at this time of year!!! I always get so used to all of the extra light we have in the summer months! Love that you were so spontaneous with this post Natalie, the video is amazing too! Smoothie heaven!

Yay for spontaneity! <3 Love this vid. So fun to see what people eat 🙂 And I can't believe even my muffins made an appearance — I feel special now hehe 🙂 Thank you! I love all the smoothy-ing and banana-yness and fruity-ness — if I had my way, that's what I'd be eating all day too, but since I share meals with my husband who *sigh* hates all those things, I can only get away with those as a breakfast or snack…

I’m so in love with those muffins it’s a little crazy! Like I could be the spokesperson for them, just telling the entire world about their awesomeness 😀 You and I would do very well sharing a kitchen, bananas and creamy things and fruity-ness all day long!

Super cute video Natalie! I loved the music…how long does it typically take to edit your videos? Do you use a certain video software editing program to edit them? You are just like me, I eat lots and lots of potatoes, which probably is no surprise to you, haha!

Thank you my fellow potato lover <3 I just use iMovie to edit, I really need to learn Final Cut Pro but that's $300 and a lot of time that I just can't spend right now. I have Adobe Premiere too, but haven't bothered learning that either. iMovie can be annoying, but it works. This one probably took me 6 hours or so, but I did a lot of text and the photo collage at the beginning and all that extra stuff. If I just did the straight video nothing fancy it would probably only be 1.5 to 2 hours. That might sound like a lot, but I'm a perfectionist I can't help it.

Some recipes are worth splurging on dairy-free whi Some recipes are worth splurging on dairy-free white chocolate and this is DEFINITELY one of them🤎🤍 That decadent chocolate + peanut butter + coconut middle 1000% deserves the creamy coating and sprinkle finish, trust me💗 Recipe below…

Vegan White Chocolate Valentine’s Truffles
-1 package @emmysorganics Dark Cacao Coconut Cookies
-1/4 cup (65g) almond or peanut butter
-1/3 cup (60g) dark chocolate chips, melted
-Pinch of salt
-1/2 tsp vanilla extract
-8oz vegan white chocolate.
-Optional: natural pink sprinkles + 1/4 cup more melted dark chocolate for topping

Melt the white chocolate. Pour a small spoonful into the bottom of each cavity of the mold, and tilt to coat the bottom and up the sides of each heart. Freeze. Set aside the remaining white chocolate. Melt the dark chocolate chips. In a food processor combine the Dark Cacao Coconut Cookies, almond/peanut butter, melted chocolate, salt, and vanilla. Process until smooth, it should be the consistency of a thick brownie batter. Place about 2 tsps of the chocolate mixture into each heart and press to flatten. Cover with remaining melted white chocolate. Chill until chocolate is set. Carefully remove from the molds. Optionally drizzle with more dark chocolate and top with sprinkles. Enjoy!

Its #nationalmedjooldateday 🥳🥳 I have wayyyy Its #nationalmedjooldateday 🥳🥳 I have wayyyyyy too many medjool recipes on the blog to mention, so I picked this friday-easy, highly-fudgy, personal fave: No-Bake Vegan Chocolate Cream Pie!

Four ingredient chocolate crumb crust. Three ingredient date-sweetened cream filling. Its truly TOO simple and TOO good❤️

Crust
-2 cups almonds (or nuts of choice)
-1/2 cup cocoa powder
-1/2 tsp salt
-1/4 cup coconut oil
Filling
-12oz unsweetened chocolate, melted
-3 cups non-dairy milk
-1 cup (10-12) pitted medjool dates (@ndmedjooldates are my favorite!)

Blend almonds, cocoa powder, and salt. Add the coconut oil. Blend until the texture is moist and crumbly. Press into the bottom of a pie pan and up the sides.

Blend the milk and dates on high until very smooth. Add melted chocolate and blend until combined. Pour into the crust and smooth the top. Refrigerate (creamier more like a pudding/mud pie) or freeze (firmer texture) overnight, or for at least 8 hours. Slice and enjoy!

Channeling sweet summer energy into this chilly wi Channeling sweet summer energy into this chilly winter week with a Dark Chocolate Raspberry Cheesecake Bar closeup🍫❤️ Swap in any berry you love (big big fan of the tart raspberry tang though😋), but you need a bite of this lush dairy-free filling on top of @emmysorganics dark cacao cookie crust situation. Recipe below…

Crust
-1 package Emmy’s Organics Dark Cacao Cookies
-1/4 cup (30g) almond flour
-2 tbsp (50g) coconut oil
Filling
-2 cups (360g) raw cashews, soaked 3+ hours then drained
-1 cup (240g) full fat coconut milk
-1/3 cup (105g) maple syrup
-2 tbsp lemon juice
-1 tbsp lemon zest
-1 tsp vanilla extract
Swirl
-1 1/2 cup (180g) fresh raspberries
-2 tbsp coconut sugar
-1-2 tbsp water

Combine crust ingredients in a food processor. Process until cookies are broken down and mixture begins to clump together. Press firmly into the bottom of a loaf pan lined with parchment paper. Blend the filling ingredients until very smooth and creamy. Pour on top of the crust. Combine berries, coconut sugar, and water in a small saucepan. Simmer over medium-high heat for 5-7 minutes stirring frequently until it begins to thicken and become syrupy. Smash with a fork until the berries are mostly broken down. Spoon on top of the cheesecake mixture and use the back of a spoon to swirl. Freeze overnight. Slice into bars and enjoy. Keep leftovers in the freezer.

Is it even christmas time without a gingerbread cu Is it even christmas time without a gingerbread cutout cookie + sprinkles moment??🎄

This is my fave vegan and paleo recipe—super moist and tender with almond flour, heavy on the molasses, with a pop of lemon, and they’re oil-free!

Ingredients
-1/2 cup coconut sugar
-1/4 cup almond butter (or any nut/seed butter)
-1/4 cup molasses
-1 tbsp lemon juice
-2 tsps ginger
-1 tsp cinnamon
-1/4 tsp cloves
-1/2 tsp baking soda
-1 tsp vanilla extract
-2 cups almond flour (oat flour option linked in my bio!)

Whisk coconut sugar, almond butter, molasses, and lemon juice until combined. Add the rest of the ingredients and mix/knead to form a ball of dough. Roll out the dough to 1/4 inch thickness between two pieces of wax paper. Chill dough flat for 30 minutes. Cutout cookies with a cookie cutter, then use a spatula to carefully transfer to a baking sheet lined with parchment paper. Bake for 10 minutes at 350F or until golden around the edges. You can re-roll/cut the excess dough. Cool completely. Decorate (I used melted coconut butter + matcha for the “glaze”) and enjoy!
