Growing up with a deep love of candy and sweets, I begrudged my sweet tooth for making me crave those sugary snacks. Now it’s a blessing, because three quarters of my diet is sweet fruit. Fortunately, I was never a big fan of salty snacks, since those are much harder to recreate 80/10/10 style. My cravings have switched from glucose to fructose, but my sweet tooth is still undeniably strong.
Speaking of fructose, my favorite recipes are those made only of fruit that still taste like dessert. These sorts of recipes usually involve lots of bananas, like this one does.
What form have bananas not taken…?
Banana bark! Banana ice cream bark with a smidge of vanilla and bursts of blueberries to be exact.
Banana Blueberry Bark
2 frozen bananas
1/2 tsp vanilla bean powder (or extract)
1 1/2 cups blueberries
- Blend the frozen bananas and vanilla until smooth.
- Stir in the blueberries,
- Spread into a single layer on a pan.
- Freeze for at least 4 hours then break it apart.
- Eat it directly from the freezer.
Does it matter if the bananas are frozen or not since you’re freezing them afterwards anyway?
It will be creamier and less icey if you use frozen bananas. The shorter the freezing time, the less ice crystals that form. So if the bananas are already frozen before blending, then the mixture will be colder, freeze faster, and be smoother. Hope that helps (and makes sense :))! -Natalie

I just used a cookie sheet, but it doesn’t matter what size pan you use because the bark doesn’t have to reach all the way to the edges. Just spread it out as much as you need to have one thick layer with all the blueberries coated fully?
Is ice-cream used also?
Just frozen bananas, but once blended they are very reminiscent of ice cream!
I tried to use my Bullet for this but it didn’t work well….I doubt a blender would do any better. I had to add a bit of liquid besides the vanilla. Still thinking it will freeze up enough.
A high speed blender with a tamper works best here, or if you have food processor that will work too. I have tried making it in a bullet and it doesn’t flow very easily. Fingers crossed you still end up with something delicious after freezing!
I have used a bullet in the paste and you have to use a form of liquid for it to work well. How did this turn out with liquid added and how much did you use? I only have a blender thinking I will need extra liquid also.
It’s really tricky to make banana ice cream in a bullet in my experience, I wish I had a good trick but I really don’t. I would try adding some non-dairy milk (coconut is best since it freezes smoothest) slowly until it blends, but it will take longer to freeze and be thinner that way. Good luck!
