My Basic Overnight Oatmeal Formula
I’m not going to claim this is the BEST way to make overnight oatmeal, because there are too many methods and ratios out there and I haven’t tried every single one. But in my personal opinion…this is the best best. There are two key ingredients that I find many recipes lack: chia seeds and salt. Chia seeds up that thick, creamy, batter-like texture factor. And a pinch of sea salt makes all the flavor difference, trust me and try it. So here is my basic ingredient list…
- Almond milk. Or any nondairy milk you have/love.
- Maple syrup. Or honey, agave, your favorite sweetener.
- Rolled oats. Also known as old fashioned oatmeal, just make sure it’s not the quick cook kind for texture reasons.
- Chia seeds. No other seed will really work in their place, you need their sticky thickening powers.
- Pinch of salt. Don’t skip it!
Now with that basic formula figured out, the flavor variations are endless.

Ingredients
Pistachio Pudding
- 1 cup (240g) almond milk
- 1/3 cup (40g) pistachios
- 1/4 tsp matcha powder (for color, optional)
- 1 tbsp maple syrup
- 1/8 tsp almond extract
- Pinch of salt
- 1/2 cup (45g) rolled oats
- 2 tbsp (20g) chia seeds
- Coconut Mini Medjools + raspberries
Espresso Brownie Chip
- 3/4 cup (180g) almond milk
- 1/4 cup (60g) brewed espresso (1 double shot)
- 1 tbsp maple syrup
- Pinch of salt
- 1 tsp cocoa powder
- 1/2 cup (45g) rolled oats
- 2 tbsp (20g) chia seeds
- 2 tbsp (25g) chocolate chips
- Cacao Pecan Mini Medjools + chocolate chips
Salted Caramel
- 1 cup (240g) almond milk
- 2 pitted (~35g) Medjool Dates
- 1/2 tsp vanilla extract
- 1 tbsp maple syrup
- 1 tbsp (16g) almond butter
- Pinch of salt
- 1/2 cup (45g) rolled oats
- 2 tbsp (20g) chia seeds
- Sweet & Salty Almond Mini Medjools + banana slices
Instructions
Pistachio Pudding
- Blend almond milk with pistachios, matcha, maple syrup, almond extract, and salt on high.
- Strain to remove any small nut chunks (optional)
- Pour into a jar, add chia and oatmeal, cover and shake to combine.
- Refrigerate overnight.
- The next morning, top with Coconut Mini Medjools and fresh berries. Enjoy!
Espresso Brownie Chip
- Combine all ingredients in a jar. Cover and shake to combine.
- Refrigerate overnight.
- The next morning, top with Cacao Pecan Mini Medjools and chocolate chips. Enjoy!
Salted Caramel
- Blend almond milk with Medjool Dates, vanilla, maple syrup, almond butter, and salt.
- Strain to remove any small date chunks (optional)
- Pour into a jar, add chia and oatmeal, cover and shake to combine.
- Refrigerate overnight.
