I threw these together on a random snack-craving whim one day, but now that I’m on batch number three in just a couple weeks I decided they must be shared. Chewy, chocolate dipped, made in just 10 minutes with 6 simple ingredients, these Easy No-Bake Muesli Bars are very much fridge staple stuff you will never want to be without.
No-Bake Muesli Bar Ingredients
These bars aren’t fancy – maple syrup or honey to sweeten, nut or seed butter to bind, a little salt, a little vanilla, cinnamon if you’re in the spiced mood – but what makes them fun is the endless variations you can easily make by switching up the variety of muesli you use. Consider it a little granola bar cheat, you don’t have to add your own nuts and seeds and dried fruits because the muesli does that for us.
The dark chocolate coating isn’t a necessity, but it certainly does add an extra delicious treat yo’self component I personally see no reason to skip. You could toss in a handful of chocolate chips instead.
Tips For The Perfect Muesli Bars
- Toast the muesli. Not required, but it takes just 10 minutes and really boosts the cozy oat flavor. Spread the muesli on baking sheet and bake for 5 minutes, stir then 3-5 more minutes until golden and fragrant.
- Pick a muesli with lots of mix-ins. My favorite muesli is from Seven Sundays, its full of pumpkin seeds, dried blueberries, dried apples, buckwheat, chia, coconut…so much yummy stuff.
- Try using tahini. If you like the flavor of tahini, it pairs so deliciously with the dark chocolate.
- Eat them cold, straight from the fridge or even freeze them. Maybe I’m weird, but I love the extra chewy chilly texture.
Quick and easy to make, quicker and easier to polish off the batch. I promise you will want another batch as soon as they’re gone!

Description

Ingredients
- 3/4 cup (185g) nut/seed butter (I love tahini here!)
- 1/2 cup (160g) maple syrup or honey
- 2 1/2 cups (300g) of your favorite muesli (this is mine!)
- 1 tsp vanilla extract
- Pinch of salt
- 1/3 cup (60g) dark chocolate chips
Instructions
- Melt nut/seed butter with the sweetener in the microwave or stovetop. Whisk until smooth. Stir in vanilla and salt.
- In a large bowl, pour wet ingredients over the muesli and stir until evenly coated (you can toast the muesli first in the oven for 7-9 minutes at 350 until browned for extra flavor!)
- Melt chocolate chips. Pour into the bottom of a 8×8” baking dish lined with parchment paper. Freeze 5-10 minutes until almost hard.
- Top with the muesli mixture, pressing in firmly.
- Refrigerate minimum 4 hours, then slice.
- Store leftovers in the fridge for up to a week.

Super happy with this! I am really bad at following quantities in recipes (as in, I don’t actually own measuring cups) but they still turned out awesome.
I used hemp & cashew butter which I made in the blender and spread the chocolate over the top of the bar slab instead of underneath, then sprinkled coconut on that.

What can I do to avoid using chocolate?
Perfect. I used honey roast peanuts and blitzed them into butter then used supermarket saver versions of honey and muesli with added saver sultanas and instead of chocolate I crushed 30g of wholewheat chocolate hoops cereal into the mix. Not sure the vanilla did anything but I also added a tspn of Valencia orange extract. Basically cheapest of the cheap but it still came out unbelievably fantastic. The orange made a huge difference. It’s an infinitely customisable recipe and it will work for those on a tiny budget. Thanks!

Hi Megan! I’ve never tested these with regular butter, 3/4 cup is quite a bit I worry they may turn out too buttery/greasy. You could try it though, or perhaps try a combination!
Why did my tahini butter not melt did over pot in glass bowl
I’m not sure… Did you bring the water to a full boil and let it boil for a while? It won’t become completely liquid, but it should been out a little bit as it warms up.
