Nicecream is something I eat almost everyday but post about almost never. I just assume it’s old news at this point.
But I was really craving a big jar of mint chip chilliness so I just went ahead and filmed a recipe anyways. Sometimes seeing someone else make it can be a little reminder of a long forgotten favorite treat. So moral of the story–Mint Chocolate Chunk Nicecream is the bomb and if you haven’t had it in a while you should make some asap!
This version is special for one reason though–those chunks!
First of all chunks > chips, yes? Good.
But these chunks are actually homemade! Made from fruit. Very easy. Very healthy.
And no, of course I didn’t use homemade chunks because there were no actual chunks/chips in the house and the grocery store seems very far away when you are ice cream hungry. No that didn’t happen at all.
Exact amounts don’t make too much difference in a recipe like this, but please, be generous with the chunks. Chunks in every single bite. Nothing is worse than digging through the entire pint for the stingy 3 chunks that just have to be in there somewhere!
You could use actual chocolate chips or chunks or even cacao nibs instead, of course.
Mint Chocolate Chunk Nicecream
- Prep Time: 10 minutes
- Total Time: 10 minutes
- Yield: 1 serving 1x
Ingredients
- 4–5 frozen bananas
- 1/4 tsp mint extract
- 1 tsp greens powder OR 1 handful of spinach (I used Philosophie Green Dream)
- 1–2 tbsps of non-dairy milk (or water)
- Homemade Chocolate Chunks ((or vegan chocolate chunks or cacao nibs)
Instructions
- Make the chocolate bits if using. Set aside.
- Add the bananas, mint extract, non-dairy milk, and greens powder/spinach to a high speed blender or food processor.
- Blend or process until you have creamy soft serve.
- Pulse or stir in the chocolate bits.
- Serve immediately.

Mmm, like a healthy McFlurry. I wish I knew what I was doing wrong when making nicecream. I see so many pictures and recipe ideas (including this, oh my!) that look amazing but I’m always disappointed when I eat it. This is going to sound stupid but it is almost too strong bananary in flavour?! I like bananas but when they taste floury and are black they have to go in a cake! Do you freeze your bananas when they are completely black and spotty or just ripe? Maybe I should freeze them when they are slightly less ripe 🙂
Yes very McFlurry-like! Oh no, I’m so sorry your nicecream experiences haven’t been good. I freeze my bananas when they are super ripe and black, and honestly I barely taste the banana flavor. But perhaps I’m just used to it at this point as I haven’t had any other “ice cream” in a long time. Definitely try playing around with different levels of ripeness though, and also do you usually make it just the plain flavor? Because if you add some cacao and get used to it as chocolate nicecream that might help. I find the chocolate covers the banana very well.

Oooh yes or maybe some crumbled cookies in there too–all the chocolate textures! My house was devoid of chocolate things, otherwise I probably would’ve gone that route. I was already impatient just waiting how long it took to film, I don’t think I could’ve waited through a whole grocery trip LOL 😀

Oh how I wish I liked bananas…I see so many amazing nicecreams everyday, but hey, at least it gives me ideas for my daughter and hubby. They both LOVE banana ice cream..I usually just make a chocolate version, so next time I totally need to make this one! I am totally with you too on the chocolate chunks being better than chips….omg, especially in baking…it’s like dreamy, melty gourmet chocolate heaven, haha!
Mmmm you are making me want chocolate 😀 My grocery store doesn’t sell the Enjoy Life chunks sadly, just the chips, but that would be my first choice to throw into this minty mess! You are so nice to make it for your family even though you aren’t a fan. Chocolate is my go-to flavor too, but this is just as easy!
My absolute most favorite ice cream flavor is mint-chocolate chip!!!! Loving these fruity chocolate chunks in here, too…OH, MY! I need to make this asap! We’ve been waiting on our bananas to ripen, so as soon as that happens, I’ll be sharing a big bowl of this with Willow. Looks amazing!
Ripen! Ripen! Ripen! I’m trying to encourage your bananas because I swear they take longer when you are totally out and want them so bad! But I adore this flavor too <3 I made it one night with cacao nibs, didn't measure anything, and learned the hard way that a tiny bit of mint extract goes a LONG way! It was literally like eating toothpaste hahaha 😀 So don't make that mistake. But I hope you try it!

Oh, I love those homemade chunks. Maybe even some of your homemade Oreos crumbled on top would work. Or the rawnola. Now when I think about it, your blog is filled with delicious nicecream toppings 😀
Yes salads too! I’m always just like nah there are already so many salads and nicecreams out there, we don’t need another. But I know that is silly 😀 Mmmm homemade oreos on top would be amazeballs! Or chocolate rawnola 😮 Oh my you have planted so many good ideas!

How about peppermint oil? That’s what I use (always have it on hand for flus and colds and the like). It is much stronger, however, so you would only have to use like 1/2 drop or something like that.
Yes that will work! Even with the extract a little goes a LONG way, so use the tiniest bit!

I could eat nicecream for every meal. But actually. It’s like eating ice cream that is healthy, so who wouldn’t want ice cream for every meal? It’s smooth and creamy and I always add in some spinach and/or greens powder for the extra healthy boost. Last summer I was all about adding in fresh mint, so I feel you on the mint chocolate flavour. So good Natalie!
Now that’s an herb I need to start growing myself, fresh mint would be great to have on hand! Have you heard of those chocolate mint plants? Supposedly the leaves legit taste like mint chocolate 😮 I need a whole garden full of them! I’m with you on nicecream for every meal, especially in the summer. Natalie! Willow and I made this a few days ago and it was amazing!!!! I’m sorry for just now leaving feedback. We used spirulina for the green and our dates were sooooooo soft that we ended up just tearing them apart and rolling into little chunks…since we were lacking patience, we let the nicecream harden the date chunks a bit instead of freezing them for a while. This was so creamy with just the perfect amount of mint flavor! This will definitely be made a lot over the summer! Awesome recipe, my friend! <3

Yayyyy!! Oh you are brave to go the spirulina route, but I’m glad I’m glad the mint hid it well enough. And yes this is definitely the sort of recipe where you want those dry hard dates that most of the time I hate. I’m going to try replacing one banana with an avocado to see if it cuts down the banana taste. I have my own peppermint plant and I might try a few leaves off my stevia plant too. I’ll be trying this on my picky grandkids next weekend. Wish me luck! Thanks for the recipe
I’ve never tried a frozen avocado nice cream but I’ve seen it done and it looks super yummy!! Can’t wait to hear how it turns out Betty, and when in doubt adding some cocoa powder to mask the avocado taste might be a good idea too!
