My granola straight from the bag consumption has recently reached a level that is truly not okay. Solution: make my own and store it in a JAR.
Yup, found a loophole. Where there’s a will SunButter Granola there’s a way.
See not just any ol’ granola would make this sneak around okay. Pushing the granola consumption bounds like this is only justified when it’s really really GOOD granola.
Perfectly salty/sweet granola. With clusters that are hunky, but not so ginormous they could be mini cookies – it must be sprinkle-able. And we don’t need every nut and seed known to man, but enough to make the texture interesting. And a little cinnamon because (even though I will continue to pretend it is not) fall is coming.
Sure it’s a breakfast food, but it’s also a brunch food and a snack food and a pack in your lunch bento food and a scoop on top of your smoothie bowl food and if you have never put granola on ice cream…OH MAN.
You can’t put a per day quota on that kind of goodness.
Here’s what we’re working with:
- oats
- sunflower seeds
- coconut flakes
- SunButter
- maple syrup
- cinnamon
- vanilla
- salt
One (and a half) bowls. One (and a half) pans. Thirty(ish) minutes. But honestly I never mind waiting for granola to bake, because breathing in that heavenly scent is almost as good as the actual munching.
You can swap the sunflower seeds for pumpkin. You can use other varieties of SunButter besides the green organic kind. You can add more cinnamon or less salt or pumpkin pie spice if your heart is telling you to.
Treat this as your yummiest nut-free + oil-free template, and freestyle it as you see fit. It’s your SunButter Granola now!

Description
Salty sweet SunButter Granola! Clusters of oats, sunflower seeds, cinnamon, coconut, and more yummy things. For breakfast, snacking, or crunchy topping!
Ingredients
- 1/2 cup (125g) Organic SunButter (or any variety)
- 1/2 cup (160g) maple syrup
- 1 tsp vanilla extract
- 2 1/2 cups (250g) rolled oats
- 1 cup (50g) coconut flakes
- 1/2 cup (80g) sunflower seeds
- 1 tsp cinnamon
- 1 tsp salt
Instructions
- Preheat the oven to 325ºF.
- Melt together the SunButter, maple syrup, and vanilla.
- Stir together the oats, coconut, sunflower seeds, cinnamon, and salt.
- Pour the wet ingredients onto the dry, and mix to evenly coat.
- Spread onto a lined baking sheet (or two, don’t over crowd it or it won’t crisp up right)
- Bake for 15 minutes at 325ºF. Stir. Bake for another 10 minutes until golden.
- Remove from the oven and cool completely (for the most/biggest clusters) before transferring to an airtight jar/container.

Wow! I made this granola today. So delicious!! I just used honey instead of maple syrup. I’m in Argentina and the options at the market are different. Our new ADDICTION!!! 😍😍😍 This is soooooooo good!! Salty and sweet and those crunchy clusters….perfection ❤️ Best of all – Willow approved. I made it so Willow had a great nut-free snack to bring tomorrow, but since we also can’t bring anything with coconut (SO frustrating) I made a minor adjustment and instead of coconut flakes, I added in some hemp seeds and a little extra oats! Turned out really well! Somehow chocolate chips got thrown into the mix after it cooled….not sure how that happened 😉 Thanks for getting me back into the homemade granola game!! So yummy! Since I was having weekend guests (that included 5 boys ages 13 and under), I made a double batch of this granola. Even with some of it getting a little extra “toasty”, two of the three jars were gone by this morning! And they brought their own cereal or I’m sure it would have ALL been gone! I did make a few small adjustments that some of your readers — or maybe even you might like! ☺️ I used less oats, didn’t put in any coconut or cinnamon and instead added a heaping 1/2 cup raw chopped pecans, because I loooove their naturally “buttery” taste and knew they’d enhance the sunbutter flavor 😋 I also tossed in some chia seeds for extra crunch and omega-3s!
