Chocolate covered strawberry meets strawberries and cream meets bounty bar – that’s where I want your imagination to wander when you think about biting into one of these berry bars. We have the perfect thin layer of dark chocolate outside, and a subtly creamy, very coconut, sweet-tart berry inside. So we’re hitting all the delicious texture and flavor and health/decadence contrast spots in one bite. And by golly is it one glorious bite.
Before we dive into the ingredient details, I don’t want you for even one second longer to live your life thinking that these bars are limited to strawberries only. No no no, friends. I have already tested a blueberry version: DIVINE. Raspberry version? Already planning, already know I will love. Blackberry version? We might have to throw it back to this similar but simplified recipe because I don’t know how easy freeze dried blackberries are going to be to find. But you get me. Experiment! And yes, white chocolate on the outside is a very very good choice too.
How To Make Chocolate Covered Strawberry Bars
The hardest part of this recipe is coating the bars in chocolate, and by hard I mean messy. The ingredients and prep is quite simple.
No-Bake Berry Bar Ingredients
For these vegan and paleo-friendly no-bake bars you will need…
- Fresh strawberries. Or whatever berry you choose to use (although if you go with raspberries or blackberries be sure blend and then strain out the seeds!)
- Freeze dried strawberries. The “fanciest” ingredient on this list, but it’s the ingredient that brings all that BOLD tart berry flavor so they are worth hunting down or ordering.
- Coconut cream. From a can of full fat coconut milk. This is where the strawberries and CREAM vibe comes in.
- Maple syrup. Or honey or agave to slightly sweeten.
- Coconut oil. To help the inside solidify to the perfect bounty bar like consistency.
- A pinch of salt.
- Unsweetened shredded coconut. And lots of it!
- Dark chocolate. Chips or bars, melted for coating. I recommend at least semi-sweet but preferably darker, its a delicious contrast to the sweet berry center. Hu Gems are my favorite for flavor, ingredients, and they melt to the perfect thin consistency for coating.
Blend everything but the chocolate, freeze until firm, slice into bars, blanket in chocolate (lick your fingers way too many times of course), and chill until the chocolate is set. That’s it, it’s that easy.

Ingredients
- 2 cups (140g) unsweetened shredded coconut
- 3/4 cup (100g) fresh strawberries
- 3/4 cup (15g) freeze dried strawberries
- 2 tbsp (25g) coconut oil
- 1/4 cup (60g) coconut cream (solid part from a can of coconut milk refrigerated at least 24 hours)
- 2 tbsp (40g) maple syrup
- Pinch of salt
- 1 cup (180g) dark chocolate chips, melted
Instructions
- In a food processor, blend the strawberries, freeze dried strawberries, coconut cream, coconut oil, maple syrup, and salt.
- Add the unsweetened shredded coconut. Blend to combine.
- Press into a lined loaf pan. Freeze at least 1 hour.
- Carefully lift out of the pan and slice into 8 bars.
- Coat in melted dark chocolate, sprinkle with more freeze dried strawberries, chill until chocolate is set.
- Enjoy! Keep leftovers in the fridge.
