And I want it to be berry speckled. And I want it to be oil-free. And I want it to be sweet and oaty. And it is! Mixed, baked, and gobbled up all in one little dish. This is my vegan and gluten-free Blueberry Muffin in a Mug.
Blueberry Muffin in a Mug
Mug muffin or muffin in a mug? I’m not sure which I like better. Or maybe we should call it muffin for the impatient.
This is my go to baked snack when I don’t feel like baking. Or more precisely when I don’t feel like waiting half an hour for a dozen when I really just want that one warm from the oven muffin. Warm from the microwave might not sound quite as wholesome, but trust me it tastes just as delicious. At any given moment you are just 2 minutes away from a purple polka dotted mug just like this.
It’s so cake-like and sweet that it can easily pass for dessert, but most often I eat it with a few apples or other fruit for breakfast.
I’m actually munching on a mug of blueberry muffin right now as I write this. This time I made it with coconut sugar because I used up the last of my date syrup in the video. Date syrup is a new to me ingredient that I just tried recently and really adore. Since it’s the fruitiest of the liquid sweetener family, that’s no surprise though. It’s very sweet and delicious but a little pricey and hard to find, so you can swap in any liquid sweetener. Or, as I just discovered, coconut sugar + a splash of non-diary milk works too.

Blueberry Muffin in a Mug (vegan + GF)
- Prep Time: 5 minutes
- Cook Time: 2 minutes
- Total Time: 7 minutes
- Yield: 1 serving 1x
Ingredients
- 1/3 cup oat flour
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract
- 2 tbsps date syrup (or any liquid sweetener)
- 2 tbsps unsweetened applesauce
- A handful of frozen blueberries
Instructions
- Whisk together all the ingredients till combined.
- Add the blueberries. Stir in.
- Microwave for 2 mins on high.
- Cool for a few minutes, then devour!

Muffin for the impatient – now that’s my kind of muffin! I admire all the creative ideas for baking you’ve come up with, but this one has really caught my attention. I can’t back out of making it due to lack of time. So I WILL make this for breakfast in the morning. One question, do you think this would work with other fruits, like apples and banana’s?

The mug is from Le Crueset, it came in a little set of three my mama gave me for christmas. Love them all <3 And I have totally been known to make 2 muffins at a time haha! So yum!
Oh Natalie this looks so good! I love the beautiful golden brown color! I absolutely love mug cakes. The first time I tried one, I was little weirded out at the different texture, but within 2 bites, I was over it, haha! I love how easy and quick and simple they are. Such easier cleanup! Thank you Brandi! The date syrup makes for such a gorgeous color. I tried it with maple and while still tasty, not as golden in color. The first time I tried a mug cake I overflowed it and make a huge mess haha! They do disappear much to fast though…need bigger mugs 😀 And I usually don’t like applesauce in baked goods so I go for banana, but calling for half seemed weird. And the applesauce totally worked, no gumminess yay!

Hehe I am especially impatient in the morning too! I’ve noticed that your last few recipes have been oil free, I think that’s awesome! There are so many other nutty and seedy and fruity ways to get the richness 🙂 I never let the hot mug think stop me from mug caking, but i did burn my fingers a little in my impatience to get it out of the microwave and devour. LOVE this recipe! I actually use 3 tbsp applesauce and just 1 tbsp maple syrup and add chocolate chips instead of blueberries and a touch of salt for dessert 🙂 it is divine!

Actually, I make some changes to recipe
I added only 1 tbs of maple syrup, 1 tbs Greek yogurt, 1/8 coconut oil, 1 tbs of almond milk
Why I did it???
Because, I think that the 2tbs of syrup is too much, and I thought to remplace the other tbs with the Greek yogurt, then I thought how this mug doesn’t attach to the container, so I added a little coconut oil, in the end I saw that the mix is a little hard so I added the milk.
But I am not sure, it needs more air, it is my observation
But how I can to get it???

I made your Blueberry Mug Muffins tonight for desert. They were so good! The first one I made, I followed your directions except for the syrup. I used maple syrup as that was what I had, and it turned out perfectly. The second one I made, I halved the syrup and used 1 Tablespoon of maple syrup and 1 Tablespoon of apple juice. This combination also turned out perfectly and was a little less sweet. This is a great little quick recipe and I intend to have these in my “Favorites”. Thank you so much!

I riffed on your bowl muffin idea last night. I used your basic idea but made three servings at one time. I subbed banana for the apple sauce and soy milk with two dates blended into it for the liquid, some vanilla, cocoa powder ( about 3 or 4 Tlbs.), walnuts and dried cherries. Made this up in a pyrex loaf pan and nuked it for 5 minutes. Amazing!!! Gooey brownie goodness! You need to play with this idea. I was in heaven!

I don’t know how they would store. They have a different texture than a baked product. I thinking that what we have here is really more of a steamed pudding. I think if the remains are covered and refrigerated they would be alright. But they might be more tasty if they are warmed before serving. I made the larger recipe up to share with my partner for an after dinner dessert, so no left overs. In England, steamed puddings are served with a custard topping or a hard sauce. I’m including that factoid, as you are so very good at coming up with lovely, creamy sauces. 😉 Have fun!

Fresh berries will be fine, I have used them before too! I usually use frozen because that’s just what I have. Happy baking 🙂
If I didn’t have Oat flour, could I use a different flour? I don’t have gluten free flours at home.
I haven’t tested this one with any other flours, but all purpose or wheat flour should be okay 🙂
I just made this, and it’s DELICIOUS. It was just what I wanted (needed)! I used 100% maple, fresh blueberries (from right here in FL), and added a pinch of cinnamon. Amazingly delicious.
