The blueberries have been especially tasty this year, don’t you think?

I’ve munched more of them this year than any other and enjoyed every bite. A few times I downed so many at once my mind started to wander to the girl in Willy Wonka who turned blueberry and had to be rolled away. I don’t think I was at serious berry-morphing risk, but one has to wonder.

Or maybe the blueberries have always been this good and it’s me that has changed. I used to think they were flavorless and gritty. I would always opt for berries of the red and seed-speckled variety instead. Eating a high fruit diet has sharpened my tastebuds for subtle fruit flavors, making me much more appreciative of all things naturally sweet.

Also, seeking out high quality berries makes a tremendous difference. You can’t beat those freshly picked, organic, extra sweet ones! The blueberry bushes in my yard are not reliable at all. They seem stuck on producing these little purple berry beginnings that never actually ripen fully. Or maybe the squirrels and birds steal them before they have the chance. Either way, thank goodness for farmers markets and pick your own farms.

For my own very berry contribution, I took the humble blueberry muffin and gave it a chocolatey twist and a creamy filling. These are Chocolate Blueberry Muffin Ice Cream Sandwiches and trust me when I tell you they are just as yummy as that name is long. A mouthful of a name for a mouthful of a muffin!

The chocolate blueberry muffins alone are something to crave. Blueberries and chocolate are another favorite pair of mine. I do not know why it took me 22 years to put cacao powder IN the blueberry muffin batter! I wouldn’t blame you if you just left the frozen blueberries and bananas in the freezer and inhale these chocolate blueberry muffins filling-free.

But the nicecream in the middle makes these muffins especially summery and especially scrumptious!

Chocolate Blueberry Muffin Ice Cream Sandwiches

Ingredients

Scale
  • Muffins
  • 1 1/2 cups oat flour
  • 2 tbsps tapioca flour
  • 2 tbsps cacao powder (or cocoa powder)
  • 2 tsps baking powder
  • 1 tsp baking soda
  • 1/2 tsp lemon juice
  • 1 tsp vanilla extract
  • 1/2 cup maple syrup
  • 1/2 cup unsweetened applesauce
  • 1/3 cup frozen blueberries
  • Ice Cream
  • 3–4 frozen bananans
  • 1 cup frozen blueberries

Instructions

  1. Muffins: preheat the oven to 350F.
  2. In a large mixing bowl combine all of the ingredients except the frozen blueberries. Stir to combine.
  3. Divide into 6-8 lined or lightly oiled muffin tins.
  4. Add 4-5 blueberries on top of each muffin and press them in. (Adding the blueberries on top keeps the batter from turning purple which looks really ugly with the chocolate.)
  5. Bake for 25 mins at 350F. Let them cool, then slice in half with a serrated knife.
  6. Ice Cream: Blend the bananas and blueberries in a blender or food processor until smooth. Working quickly, spoon the ice cream onto the bottom half of each muffin, smush down with the top of the muffin, and (optionally) coat the sides with chocolate chips. You can use the muffin pan to build them in too.
  7. Freeze immediately for 30 mins. Enjoy!

      I pretty much pulled out the entire contents of my freezer looking for a bag of them I thought I had a couple of weeks ago only to find nope I was out, so I agree with you on the sad state of a freezer without.     This is soooo genius! it makes me think of ice cream and cake that I used to eat at birthday parties when I was little! except I can eat this because it’s HEALTHY as opposed to the ice cream and cake which was totally not hahaha 😉 I love this recipe!

      It is a lot like ice cream cake. Funny thing is I actually used to hate ice cream cake haha! The whole frosting AND ice cream thing just weirded me out 😀 So no frosting here. You know what other non-traditional food would make a very good ice cream sandwich? YOUR BROWNIES! Can you image two of those with ice cream in the middle…heaven <3

    I know, let’s take 3 of the best things (blueberry muffins, chocolate and ice cream), and combine them into one! Oh wait, that’s what you did . . . these look incredible!     Even without the ice cream I’m SO into these glorious muffins!! The ice cream just makes them even more droolworthy. I’ve also been way more into blueberries this year, so sweet and juicy. The box I just got has some of the biggest blueberries I’ve ever seen! They’re amazing and I love them <3 and these <3 and you!!!!

    Oh my goodness gracious, Natalie! Basically, I have to accept that every time I visit your lovely corner of the blogging world, you’re gonna have outdone yourself. I thought it seriously couldn’t get any better than those double chocolate ice cream cupcakes, and now here we are (well, here I am) drooling like I’ve got no self-control. Those chocolate chips dotting the melty layer of nice cream… *happy sigh* 🙂 So funny that you made this recipe with a combo of chocolate and blueberries. Okay, don’t think I’m weird, but do blueberries sometimes taste like chocolate to you?       Blueberries that taste like chocolate!?! I think I need to come to Maine just to try the berries now, what am I missing out on!!!? I’m sorry, but I sadly cannot relate on that one. When I eat blueberries I often think “Wow these would be good with some chocolate.” or “Man, blueberries are great and all, but chocolate…<3" but that's as close as it gets. And I did just go eat some with your comment in mind to test it...nope. There are a lot of downsides I can foresee being a blueberry-person, but being rolled around would not be one of them. It sounds kind of convenient really, like you are your own wheel. Just someone roll me into the chocolate river please, face down? Mmmm you just described what sounds like the most wonderful afternoon! I'll meet you in dreamy berry la la land! ? xo

    Adding cacao to blueberry muffin batter is genius!! And pairing it with that creamy nicecream is even better – love how those mini chips found their way in there ? I’ve always been crazy about blueberries, but this summer we’ve been going through them faster than ever…now if only I could get Willow on board with fresh blueberries – she prefers eating through bags of frozen ones until her face and fingers are purple!
    All of these recipes sound wonderful! What a great collaboration ❤️ Blueberry heaven!!

      Hahahaha! Willow’s baking style has rubbed off on me–when in doubt add mini chocolate chips 😀 According to my sister you get pretty amazing berries up there, so I bet it has been delicious! I got one batch of freshly picked ones from a friend and the grocery store ones just don’t even compare anymore. I need to go to the farmers market and get some good ones! I love the frozen too, but they are like a complete different snack experience. Oh yes, I had major purple fingers too after adding all those blueberries 🙂 It’s always fun to collaborate with other bloggers, thanks for the sweet comment Mandy <3

    These photos are stunning! And I’m so so happy I found blueberries here. Living in China means foods come and go in a flash depending on the season, so I’ve been buying blueberries as often as I can to stuff in the antioxidants. Love that you sandwiched banana ice cream between a muffin…brilliant!

    Oh wow, this looks like some incredibly messy dessert that my daughter would go crazy over, hahaha! She loves, LOVES blueberries and I put them in her oatmeal every day, but funny enough, she hates them in pancakes. So strange. I don’t like bananas, but she loves banana ice cream and I imagine she would really love banana blueberry ice cream too!! I’ve made her chocolate nice cream many times and she really loves them. I haven’t had an ice cream sandwich in so so long, but I loved them as a kid. You had to eat them really fast though or they make the cookie part soggy. I love the gorgeous color that blueberries give everything, as I really love purple! Great idea Natalie!

      I am kind of on a melty messy dessert kick right now. You should see my poor camera and tripod haha! I think Olivia and I would get along very well, it sounds like we like lots of the same things. And I’m sure she is an expert taste tester by now 🙂 Although I love blueberries in pancakes, that is a funny one not to like. I haven’t had an ice cream sandwich in a long time either, but I do remember them being incredibly messy with that weird chocolate cookie that stuck to your fingers like crazy! I was always more of an ice cream sundae kind of person, but when you put it in a muffin and can reasonably call it breakfast food I’m in 😀 Thank you Brandi!

      I have not, although a paleo flour blend could work! I do have a almond flour blueberry muffin here too: https://www.feastingonfruit.com/vegan-paleo-blueberry-muffins/ You could easily add cocoa or cacao powder to that one 🙂

Blueberry Walnut Coffee Cake! THE coffee cake for Blueberry Walnut Coffee Cake! THE coffee cake for cozy mornings while we count down days until spring☀️ Vegan and grain-free with an ultra moist fluffy crumb! Recipe below…

Cake
-3/4 cup (180g) non-dairy yogurt
-1/2 cup (125g) almond butter or tahini
-1/2 cup (160g) maple syrup
-1 tsp vanilla extract
-1/3 cup (40g) coconut flour
-1/3 cup (40g) tapioca flour
-2 tsp baking powder
-1/4 tsp salt
-1 cup blueberries (fresh or frozen)
Streusel
-1/4 cup (50g) coconut oil
-1/4 cup (35g) coconut sugar
-2 tbsp (15g) coconut flour
-1 tsp cinnamon
-1/4 cup (30g) chopped walnuts

Preheat the oven to 350F. Whisk together yogurt, nut butter, maple syrup, and vanilla. Add dry ingredients and mix to combine. Gently fold in the berries. Spread into a greased or lined baking dish (mine was 9x6”). In a small bowl combine all the crumble ingredients. Mix with a fork until clumpy. Sprinkle evenly over the top of the cake batter and press in gently. Bake for 38-40 minutes (the center should feel firm to the touch when it’s done). Remove from the oven, cool for at least 30 minutes before slicing.

Vegan White Chocolate Valentine’s Truffles
-1 package @emmysorganics Dark Cacao Coconut Cookies
-1/4 cup (65g) almond or peanut butter
-1/3 cup (60g) dark chocolate chips, melted
-Pinch of salt
-1/2 tsp vanilla extract
-8oz vegan white chocolate.
-Optional: natural pink sprinkles + 1/4 cup more melted dark chocolate for topping

Melt the white chocolate. Pour a small spoonful into the bottom of each cavity of the mold, and tilt to coat the bottom and up the sides of each heart. Freeze. Set aside the remaining white chocolate. Melt the dark chocolate chips. In a food processor combine the Dark Cacao Coconut Cookies, almond/peanut butter, melted chocolate, salt, and vanilla. Process until smooth, it should be the consistency of a thick brownie batter. Place about 2 tsps of the chocolate mixture into each heart and press to flatten. Cover with remaining melted white chocolate. Chill until chocolate is set. Carefully remove from the molds. Optionally drizzle with more dark chocolate and top with sprinkles. Enjoy!

Its #nationalmedjooldateday 🥳🥳 I have wayyyy Its #nationalmedjooldateday 🥳🥳 I have wayyyyyy too many medjool recipes on the blog to mention, so I picked this friday-easy, highly-fudgy, personal fave: No-Bake Vegan Chocolate Cream Pie!

Four ingredient chocolate crumb crust. Three ingredient date-sweetened cream filling. Its truly TOO simple and TOO good❤️

Crust
-2 cups almonds (or nuts of choice)
-1/2 cup cocoa powder
-1/2 tsp salt
-1/4 cup coconut oil
Filling
-12oz unsweetened chocolate, melted
-3 cups non-dairy milk 
-1 cup (10-12) pitted medjool dates (@ndmedjooldates are my favorite!)

Blend almonds, cocoa powder, and salt. Add the coconut oil. Blend until the texture is moist and crumbly. Press into the bottom of a pie pan and up the sides.

Blend the milk and dates on high until very smooth. Add melted chocolate and blend until combined. Pour into the crust and smooth the top. Refrigerate (creamier more like a pudding/mud pie) or freeze (firmer texture) overnight, or for at least 8 hours. Slice and enjoy!

Channeling sweet summer energy into this chilly wi Channeling sweet summer energy into this chilly winter week with a Dark Chocolate Raspberry Cheesecake Bar closeup🍫❤️ Swap in any berry you love (big big fan of the tart raspberry tang though😋), but you need a bite of this lush dairy-free filling on top of @emmysorganics dark cacao cookie crust situation. Recipe below…

Crust
-1 package Emmy’s Organics Dark Cacao Cookies
-1/4 cup (30g) almond flour
-2 tbsp (50g) coconut oil
Filling
-2 cups (360g) raw cashews, soaked 3+ hours then drained
-1 cup (240g) full fat coconut milk
-1/3 cup (105g) maple syrup
-2 tbsp lemon juice
-1 tbsp lemon zest
-1 tsp vanilla extract
Swirl
-1 1/2 cup (180g) fresh raspberries
-2 tbsp coconut sugar
-1-2 tbsp water

Combine crust ingredients in a food processor. Process until cookies are broken down and mixture begins to clump together. Press firmly into the bottom of a loaf pan lined with parchment paper. Blend the filling ingredients until very smooth and creamy. Pour on top of the crust. Combine berries, coconut sugar, and water in a small saucepan. Simmer over medium-high heat for 5-7 minutes stirring frequently until it begins to thicken and become syrupy. Smash with a fork until the berries are mostly broken down.  Spoon on top of the cheesecake mixture and use the back of a spoon to swirl. Freeze overnight. Slice into bars and enjoy. Keep leftovers in the freezer.

This is my fave vegan and paleo recipe—super moist and tender with almond flour, heavy on the molasses, with a pop of lemon, and they’re oil-free!

Ingredients
-1/2 cup coconut sugar
-1/4 cup almond butter (or any nut/seed butter)
-1/4 cup molasses
-1 tbsp lemon juice
-2 tsps ginger
-1 tsp cinnamon
-1/4 tsp cloves
-1/2 tsp baking soda
-1 tsp vanilla extract
-2 cups almond flour (oat flour option linked in my bio!)

Whisk coconut sugar, almond butter, molasses, and lemon juice until combined. Add the rest of the ingredients and mix/knead to form a ball of dough. Roll out the dough to 1/4 inch thickness between two pieces of wax paper. Chill dough flat for 30 minutes. Cutout cookies with a cookie cutter, then use a spatula to carefully transfer to a baking sheet lined with parchment paper. Bake for 10 minutes at 350F or until golden around the edges. You can re-roll/cut the excess dough. Cool completely. Decorate (I used melted coconut butter + matcha for the “glaze”) and enjoy!

GINGERBREAD BLENDER ICE CREAM with molasses and spices and copious cookie crumbles of course🍪 Recipe below, happy friday!

4-5 frozen bananas
2 tbsp molasses
1/2 tsp ground ginger
1/2 tsp ground cinnamon
1/2 tsp vanilla extract
1 tsp lemon juice
Gingerbread cookies, crumbled (link to my fave vegan/gf recipe in my stories!)

Blend everything except the cookies in a high speed blender or food processor until creamy and smooth. Add half of the cookie crumbles. Blend briefly to combine. Spread into a shallow pan or dish. Sprinkle more cookie crumbles on top. Freeze for at least 2 hours. Scoop into bowls, top with more cookies, enjoy!
