I just drank the rainbow. Well almost. The rainbow minus red plus coconut. Close enough to call it a Rainbow Smoothie.
You all know how to make smoothies, there is nothing novel about the ingredients or the process. It’s just about presentation and fun factor really–a little inspiration to treat yourself to an over-the-top smoothie. I certainly am guilty of eating the same green smoothie straight out of the blender day after day, putting no thought or effort into what’s running through my straw. But pretty food tastes better, so treat yourself to a smoothie of many colors. And there are 3 types of fruit and 2 types of veggie in one jar so there’s a nutrient bonus for you too.
I promise this looks much fancier than it is. Zero planning went into this creation, it was purely just using things I already had in my fridge or freezer. But yes, I do have a very fruity freezer.
There is a bit of banana in every layer along with a splash of coconut milk. I kept the consistency quite thick–somewhere between smoothie and nicecream–for easier layering. You can use a chopstick or the end of a spoon to swirl them together more too.
As for the colors…
The orange is carrot.
The green is spinach.
The yellow is pineapple.
The purple is blueberry. The purple was the tastiest layer in my opinion. I just have a thing for purple foods.
The most fun part is if you drink it with a straw the layers disappear one by one, bottom first. And your smoothie changes flavors every few sips!

Ingredients
- ORANGE LAYER
- 1 frozen banana
- 1 medium carrot
- Enough non-dairy milk to blend (about 1/3 cup)
- GREEN LAYER
- 1 1/2 frozen banana
- 1 handful spinach
- Enough non-dairy milk to blend (about 1/3 cup)
- YELLOW LAYER
- 1/2 frozen banana
- 1 cup frozen pineapple
- Enough non-dairy milk to blend (about 1/3 cup)
- PURPLE LAYER
- 1/2 frozen banana
- 1 cup frozen blueberries
- Enough non-dairy milk to blend (about 1/3 cup)
- Optional: coconut cream for topping
Instructions
- Blend each layer individually, rinsing the blender in between. Set them in the freezer while blending the others.
- Once all layers are blended, spoon them into a glass one on top of another. Top with coconut cream if desired.
- Drink immediately.
